Sunshine Chicken

Reviewed: Jan. 7, 2011
This was very yummy. I used honey instead of corn syrup and cooked on a broiling pan and reserved some sauce to dip the chicken in. I also added cayanne for a kick and fresh minced garlic instead of garlic powder. It was very easy and most ingredients you already have in the kitchen. The sauce that I reserved I split it before adding the minced garlic and added garlic powder. Garlic just isnt good not cooked!

Jalapeno Pepper Appetizers

Reviewed: Jan. 10, 2011
I started out making these with my mom when I was 10 years old. At first we did them the same way the recipe says and they turn out great but through the years I have come up with some other ways and additions to the recipe. One thing you have to make sure you do correctly is get all of the seed and stems out of the jalapeno. If not they will most likely be too hot to eat comfortaby. I also cook my bacon first and crumble it and add it to the cream cheese mix. I also cook a chopped onion in the grease and add that to the mix too. I add garlic powder and tonys and stuff the jalps with the mix and cook on 350 for about 30-45 minutes. I usually make stuffed mushrooms the same time I make the jalps and I stuff them with the same mix and cook the same time. They are both always a huge hit! I make them for every party we have.

Zesty Slow Cooker Chicken Barbecue

Reviewed: Jan. 12, 2011
Very good! I did some things different. I defrosed my chicken first and added 4 cloves minced garlic and 1/2 a chopped onion. Cooked on low for about 4 hours then shredded chicken and put it back in for a hour. Came out great! Use brown sugar also and added red pepper. My husband ate it on a hoggie and I had mine in a backed potato. Tomorrow for lunch I will be putting it in a southwest salad. I love how many different things you can do with this recipe. Also I thought there was too much sauce in it and that is why I shredded it and put it back in but it covered it completly. Amazing!

Country Green Beans

Reviewed: Jan. 13, 2011
I make something similar to this but I do it a little differently. I melt my butter and saute onion and garlic and cut up bacon pieces. Then I snap off the ends of the green beans and boil them in salted water in a seperate pan for 10 minutes. Then I drain the water and mix in the green beans with the onion, butter and bacon. Always a big hit when we have dinner parties.

Feta Chicken Salad

Reviewed: Jan. 20, 2011
This was really good! I added dejon mustard, cayanne, and tonys. Next time I might add boiled eggs. I was kind of concerned about the feta cheese but my husband always tells me that you will never know if it is good unless you try it so I did and I am glad I did. Great recipe!

Marinated Baked Pork Chops

Reviewed: Jan. 26, 2011
It was okay. I did double the sauce and used sesame oil instead of veg oil. Next time I will only use 2 tbsp oil and double everything else EXCEPT the sugar... it was way too sweet. I added Cayanne and Red Pepper and more acid to balancethe sweetness and it helped but it was too much sugar. I also cooked it covered for 30 minutes then uncovered and broiled 3-4 minutes on each side. It adds a nice glaze and a good crisp to it. I will still add the extra spice next time. I served with rice and squash and it came out decent. I will try this again with the changes I mentioned. Worth trying!

Grilled Venison Backstrap

Reviewed: Jan. 31, 2011
Wow! I mean Wow! I used apple juice and added just some salt and pepper and after I poured out the juice I wrapped the bacon with red onion and jalapeno slices and let the bacon marinade in the bbq sauce also. Grilled for 15-20 minutes and they were perfect!

Mexican Corn Bread

Reviewed: Feb. 3, 2011
This was very good. I used plain corn instead of creamed. I also added a spoon full of sugar. I didnt have canned jalapenos so I only added the fresh. With the canned it would have been much better! Also I would even put more cheese next time but thats just because I really like cheese.

Simple Baked Apples

Reviewed: Feb. 6, 2011
Really good! I made these because I had some apples that were going to go bad and I needed to use em up. I subbed dried cranberrys for raisins and crushed almonds for walnuts and I used soy milk. It worked out perfect. I made homemade whipped cream to go on top.

Homemade Four Cheese Ravioli

Reviewed: Feb. 7, 2011
I followed the dough recipe pretty much exactly but I had to add more water. Thats the part I was most worried about. I added motzerella cheese, ramano and feta bc thats all I had and made a spinach alfredo sauce and chicken to go on top. Make sure you roll out the dough to be pretty thin. I am giving 5 stars for the dough and directions for it. My husband said that it was better than going to olive garden. :)

Feta Chicken

Reviewed: Feb. 10, 2011
OK I cant even say I really followed the recipe because I used chicken thighs and even after pounding them they were too small to stuff and fold over so what I did was first, marinated the chicken in itallian dressing for 2 hours, next breaded the chicken in a ziplock bag with bread crums and parmesean cheese, then greased baking pan put chicken on and sprayed cooking oil on the top of the chicken then I placed it in the oven for 30 minutes then added the feta cheese on top of the chicken and some motzerella I had left over from another recipe. Also sprinkled with red pepper. It was great. I will try this again with breasts and try stuffing it. Oh and I also topped with green onion bc thats what I was planning on putting in with the feta cheese.

Seafood Stuffed Avocados

Reviewed: Feb. 10, 2011
This was pretty good! I used everything that the recipie calls for but added some other things. First, more cucumber, 3 tbsp red onion (I think it needed more than that too), added cayanne, and I used light ranch and mayo. Also I used the alvacado. I put one lemon on it to make sure it didnt brown. I would have put the lemon on the whole mixture but my husband hates lemonly stuff so I only put it on the alvacado. Also I used fresh dill, I think it really helped. My husband and I loved it.

Spinach and Feta Pita Bake

Reviewed: Mar. 1, 2011
This is sooo good! I havent been able to find peta bread so I have been using sourdough english muffins and they work really well. I have had trouble finding tomato pesto also so I have used tomato bruchetta and prego spaghetti sauce and both have worked out just as good. I also add goat cheese if I have it. This is a great quick lunch or dinner. Perfect to have kids make too!

Southwest Chicken

Reviewed: Mar. 9, 2011
Made this tongiht and it was great. I cooked it in the crock pot for 4 hours on high and added maybe a 1/2 c water to it. I added more cumin, chilli powder, garlic salt and 1/2 onion and cilantro. Topped with cheese and more cilantro (I love it!) I also added more salt. It just needed something. A lemon or lime might have been good but my husband hates it when I add that. Very good base recipe.

Oxtails with Gravy

Reviewed: Mar. 11, 2011
Yummy! I made this last night and it was amazing. I cooked the oxtails the night before and the only thing I did different was use onion powder and garlic powder instead of onioin and garlic. I cooked for 3 hours and the water reduced down a lot. I put the broth in the fridge so I could take the fat off the next day. The next day I warmed the oxtails in the oven on 275 for 30 min. I took the fat off the broth and warmed it in the microwave and I only had about 1/2 c of broth so I tasted it and it was really salty so I just added water to it to make a cup and used low sodium chicken broth for the other cup. Made gravy as recipe says and used worchester for browning sauce. When it was done I put the oxtails in the gravy and cooked on low for about 30 min. I give it only 4 stars bc the broth doesnt make 2 cups but thats ok bc it probably would have been too salty. Make sure you add broth slowly when you stir it in (about 1/4-1/2 c at a time).

Chicken Bouillon Rice

Reviewed: Apr. 29, 2011
This is the recipe my husband taught me when he showed me how to make rice. The only problem with the bullion cubes is that one half of a cube (1500 mg) is the amount of salt you should have in one day. If you can buy low sodium premade chicken broth do so. If not use one cube. I love salt but my high blood pressure doesnt :)! Butter is good to add to but absolutley not necessary expecially if you are looking out for your health. If it is still too bland for you add some herbs or spice (Red peeeper, cayanne). I hope this helps whoever is trying to stay healthy out there!

Mexican Corn on the Cob (Elote)

Reviewed: May 2, 2011
Made this tonight and I accidentally mixed the butter and mayo together before I basted it onto the corn but it was still really good. I also added cayanne, chilli powder and cumin to the mayp mixture. Used grated ramano for the cheese and roasted in the oven on 350 for about 15 minutes since I realized we didnt have charcoal. It came out perfect! I will be making again soon!

Fried Egg Sandwich

Reviewed: May 16, 2011
I followd another reviewers advice and I am so glad I did. This is what I did: Toast your bread and spread with mayo and ketchup. Then I took an oversized coffee cup and sprayed with pam then cracked an egg into it. Then I poked 3 small holes in the yoak. Then cover the cup losely with wax paper and put it into the microwave for 45 seconds. Then add your salt and pepper and slide it onto your bread and top with cheese. I will never be going to get McDonalds breakfast again!

Bacon 'n' Egg Bundles

Reviewed: Jun. 4, 2011
I made my bacon in the oven cooking it on a piece of foil crumbled up and on a cookie sheet on 350 for 15-20 minutes. It is cooked most of the way through that way but still soft. I scrambled my eggs and added cilantro and green onion. No salt needed because the bacon is so salty. I added cheese to some and some I did without. Both were good. Cooked for about 17 minutes and they were perfect. I added salsa to the top of mine. Very good! Very pretty too!
