Mama's Best Broiled Tomato Sandwich

Reviewed: Dec. 5, 2012
Made this on garlic 4 cheese Texas toast and just put the mayo/parm mix on top of the cheese after I toasted the toast. I added freeze dried basil but fresh would be better and added parmesean on top of the tomatoes. It was very good! If you have someone who has to have a protien a quick fix is a fried egg in between the bread and tomatoes.

Holiday Cherry Pie

Reviewed: Nov. 21, 2012
I have been making this for a few years now and it is always a hit! Do add more brown sugar. When I want something a little different I mix in a can of crushed pineapple with the cherry pie filling. It is delicious!

Gourmet Tuna Salad

Reviewed: Nov. 4, 2012
Just made this and it was really good. I needed a recipe without relish bc I ran out so I took a risk and tried this. I made as is at first obmitting the almonds and using one big spoon of sour cream and two big spoons of mayo. I only made 1/2 the recipe. It was good as is but I added another stalk of celery, more worcestershire, garlic powder, onion powder and cayanne to give it a kick. Do not add salt whatever you do. I also read some reviews added lemon juice but I added the juice from my bananna peppers instead. Next time I would use more caperes than olives. I am really glad I found a recipe that tastes good without the typical ingredients.

Basic Corn Muffins

Reviewed: Sep. 2, 2012
This is a very good basic recipe. I was out of Jiffy and wanted to make some mexican cornbread and that is what I usually use but not anymore :) Now since I was adding cheese, jalapenos and corn so I changed some things up a bit. I added an extra egg, vegetable oil instead of canola, 2 cups cheddar cheese, one can diced jalapeno peppers (next time I will use whole pickled ones). Most recipies for mexican cornbread call for creamed corn but I just dont like it so I added 3 big spoonfulls of sour cream to make up for the creamed part. I served this with some spicy pinto beans and it was delicious. If I wasnt adding the cheese and stuff I would have only used one egg. These were really easy to make and with ingredients I always have on hand. Thanks for the recipe!

Chicken Breasts with Herb Basting Sauce

Reviewed: Aug. 7, 2012
This is delicious. I did use different herbs to use what i had (rosemary, basil, mrs dash herb blend0 and used about 3 tbsp of garlic. I also seasoned the meat with cajun seasoning and a touch of lemon pepper. I also cooked a whole onion with it bc I didnt read the ingredients right. I added 3 tbsp of melted butter and a can of mushrooms to the pan. Cooked covered for 30 min then uncovered for 20. My hubsband couldnt stop raving about how good it was. Tonight with the leftovers I am making gravy with the pan drippings and pour it over some ratoni pasta and shred the leftover chicken to go in it.

Deep South Fried Chicken

Reviewed: Jul. 26, 2012
This fried chicken was much easier to make then I thought it would be. I added cajun seasoning and garlic powder to the flour instead of salt and pepper. I think I might flip half way through next time. I didnt use a cast iron skillet but I will try it next time. Delicious!!

Ham Cake-ettes

Reviewed: Apr. 18, 2012
This is so good. My husband who hates any kind of potatoes said he would eat it again! I didnt add any ham bc I was looking for a side for dinner and had leftover mashed potatoes so decided to do this. Used herbed panko crumbs so didnt add any salt or dried dill. I cant wait to eat the leftovers tomorrow for breakfast!

I made this as is except I used salami bc thats what I had. I added some fresh dill along with the pickle and it was sooo good. You can do so many things to the cream cheese for a party trey and have several options for people. These are very easy to make too.

Cheesecake Topped Brownies

Reviewed: Jan. 12, 2012
This I tweaked. Bake brownies for about 10 minutes before adding the cheesecake mixture. I did 5 minutes and it still wasnt all of the way done. Just the edges were. It was still very good but just gooey. For the cheesecake mixture I added 2 tbsp lemon juice bc it was too sweet to be cheesecake. I also added 4 oz more cream cheese. I would probably add a full 8 oz of cream cheese next time and leave the other ingredient amounts the same.

Fudge

Reviewed: Nov. 12, 2011
Followed the recipe exactly and all of the people I had over had 2-3 pieces (they were small) but it just wasnt my grandmas fudge. It was very good just not what I wanted. It was done in about 2 hours for those of you wanting to know how long it takes after putting it in the fridge.

Oven Fried Chicken IV

Reviewed: Nov. 10, 2011
OK I probaby shouldnt even review this bc the only part I followed was use the sour cream then bread crums.I halved the recipe for 3 split breasts cut in half. I seasoned sour cream with garic powder, crushed rosemary, onion powder, chilli powder, cayanne, a ranch packet (next thime I would use only 1/2) and a lot of hot sauce. If you had trouble with the coating of the sour cream make sure you are drying your chicken really well. This was very good. My husband who doesnt even like sour cream loved this. I was origionally going to follow it exact but I started making it and it made me think of this dip I make and love so I made the dip instead.

Mini Ham And Cheese Rolls

Reviewed: Nov. 8, 2011
I made these for a family lunch we had (about 10 ppl) and everyone LOVED them. I did add garlic powder and onion powder. I brushed the insides with the sauce and made some with provalone and some with swiss. Also 12 with regular rolls and some with hawaiian rolls. I also ended up making an extra batch of the mixture to brush on the top. I made them the night before and cooked them at my grandmas house when I got there.

Soul Smothered Chicken

Reviewed: Oct. 19, 2011
This is amazing. My husband told me I better put this in my recipe box right now so I dont forget about it. I saw that some people had a hard time with the directions so this is what I did. I seasoned my flour with Tonys and left out the salt and pepper. I browned my chicken in the butter but did not drain it before I added the veggies. Then I added my flour 1 tbsp at a time then stir until it makes a paste then add chicken broth slowly 1/4 c at a time then add chicken and bring to a boil. Cook about 45 minutes. Also for those of you that dont like meat on the bone I would suggest buying split breasts and removing the breast and skin yourself and add the bons when you start the gravy that way you still get the flavor the bone gives off. It really does make a difference.

Baked Buffalo Wings

Reviewed: Oct. 18, 2011
This is a great recipe. Only changes I made was to use Tonys instead of cayanne and salt and I baked 15 min on each side THEN I dipped them in the sauce put them back in the oven for 15 minutes and they were perfect. Tender, juicy and had a great flavor. Oh and I used Cholula hotsauce instead of Franks (my husband doesnt like it.)

Oven Fried Party Drummettes

Reviewed: Oct. 12, 2011
These were pretty good but I would suggest adding some seasoning salt like tonys to the flour bc it just needed something more. The ranch dip is very good. I added only 1/2 a packet to the dip and 1/2 a pack of onion soup mix and a lot more hotsauce. I now make it just to dip my veggies in. I like it better than making the plain ranch dip the way the ranch packet tells you too bc it makes a thicker dip and that makes it easier to dip veggies in. All in all very good for when you dont want spicy buffalo wings.

Jalapeno Chicken II

Reviewed: Jul. 28, 2011
Made this last night with the following changes. I precooked my bacon in the oven on 375 for 15 minutes. I also put my jalapenos in the microwave for 2 minutes before deseeding them to make sure they would be soft enough. I also pounded out my chicken and cut them into strips before cooking. I didnt have time to marinate so I used BBQ shake and bake on the chicken and it was good..I also added shredded cheddar to the cream cheese. I took the cooked bacon down, then chicken, the jalapeno and rolled them up and secured with toothpicks. Really good!

Cherry Tomatoes Filled with Goat Cheese

Reviewed: Jul. 19, 2011
I just made a quick bunch of these and I didnt have goat cheese (which I will try) but I used feta and it worked well. I didnt add salt to the mix but I did sprinkle some kosher salt on after. I also drizzled with olive oil when I was done then rolled them around to get it all over them. I also used a paring knife and that was perfect. Verg good and cant wait to try with goat cheese.
