Baked Salmon II

I'm not a beginner - we eat salmon and other fish every week, but I decided to try this recipe. Overall it was easy and delicious - I substituted garlic scapes for the garlic (because they're in season and I'd never used them before) and used a little less oil. I used wild Pacific salmon filets from our local organic store - they are pretty thick but I only did 20 minutes in the oven. It was well-done, but I think next time I'd try maybe 18 minutes because I like it a little more medium. Cooking fish filets 35 minutes is way way too long!

Turkey Tenderloins

I was excited to try this recipe because of all the positive reviews, but it was a let-down for me. I made it exactly as written, but the soy overpowered everything and was extremely salty. I'll be looking for a different recipe for turkey tenderloin.

Zucchini Ranch Meatloaf

This is my new go-to meatloaf recipe, hands down. Made it exactly as written (except using all lean beef and no turkey) and it is amazing. Served with mashed cauliflower and broccoli.

Simply Divine Meat Loaf with Spinach

After reading many reviews, I decided to try this just as is ... the only exception I made was to substitute 1 c. oats for the breadcrumbs, just because I'd never thought of that. It was absolutely fabulous ... and I think it would be great with the breadcrumbs as well. Don't change anything - just go for it!

Trout with Lime and Thyme

I used Rockfish and tilapia and substituted the juice of a lemon for the lime because that's what I had ... it was healthy, delicious, and so easy!

Grandma's Famous Salmon Cakes

I was skeptical about this recipe because there are so few ingredients, but decided to try it based on all of the reviews. The only addition I made was about 1/4 cup of light Bisquick mix. My husband, who rarely raves about anything made with canned salmon, thought it was amazing!

Cheesy Vegetable Soup I

Loved this soup! Added mushrooms and celery. Cut margarine in half. Next time Ill add either lump crab or shrimp and maybe a pinch of cayenne or Old Bay seasoning.

Cocktail Meatballs II

No time to make meatballs - I used frozen meatballs, put them in a crockpot, poured the sauce over and cooked on low until party time ... this gets rave reviews every time!
