I made this cake twice now. The first time I thought it was dense, but after reading the other reviewers suggestions decided to try again. Both times the cake was for a birthday party and so it was made a couple days in advance, frosted, and refrigerated. This time however, I was making a castle, so I had left over pieces of cake, which of course I couldn't wait to try. The cake was light, fluffy and delicious!! Absolutely the best cake I've ever had! On the day of the party however, one of the other mothers asked me if I used POUND CAKE! The cake had gotten very dense. - still delicious though. Apparently this cake condenses over time, and should be eaten the day it is made if you want it to be light and fluffy.
