Grandma's Green Bean Casserole

I guess I just don't like canned green beans. Maybe with fresh green beans, a lot more crackers and less sour cream it could have been better. Not sure and not going to bother trying it again.

Thai Spicy Basil Chicken Fried Rice

Amazing. My husband had plans to go out for dinner with a friend and was actually wishing he wasn't going out when he smelled and tasted this dish as I dished it out for the kids. I couldn't find oyster sauce at the market, so used 1 tbsp red curry paste and 1tsp sesame oil instead. I will keep looking for oyster sauce and try again.

Bran Flax Muffins

Absolutely the best! Very moist. Very tasty. I make carrot juice a lot with my juicer and throw away a lot of carrot fiber. Today I used the leftover carrot and apple fiber in these muffins and it was amazing. I realized halfway into it that I was missing the flax seed, so I used wheat germ in its place. I'm not sure how much this changed the taste since haven't tried it with flax. However, it's my understanding that flax oil goes rancid / converts to free radicals at the slightest increase in temperature, and certainly shouldn't be stored after baking at room temperature. So I won't use it in baked goods anyway.

Stuffed Green Peppers I

Excellent. This is my favorite stuffed pepper recipe. I used another reviewers suggestion to use goat cheese instead of cheddar - as I don't care for fatty cheddar. Kids and hubby all liked it. Hubby actually wanted seconds. :-)

Pretty good. Nice presentation. Mixed reviews among my 4 kids and hubby. Next time I will try with a few changes as the salmon pate was a little overpowering for my family's taste. This recipe made enough for two nights for my family of 6.

Strawberry Cake from Scratch

I made this cake twice now. The first time I thought it was dense, but after reading the other reviewers suggestions decided to try again. Both times the cake was for a birthday party and so it was made a couple days in advance, frosted, and refrigerated. This time however, I was making a castle, so I had left over pieces of cake, which of course I couldn't wait to try. The cake was light, fluffy and delicious!! Absolutely the best cake I've ever had! On the day of the party however, one of the other mothers asked me if I used POUND CAKE! The cake had gotten very dense. - still delicious though. Apparently this cake condenses over time, and should be eaten the day it is made if you want it to be light and fluffy.
