Squash Stew

I really liked this recipe. I added a potato for a little extra hardiness, but otherwise followed the recipe. Really good with a dollop of sour cream or plain yogurt. Will definitely be making again.

Roquefort Pear Salad

Delicious. Only change was I added some dried cranberries and omitted the avocado. I was looking for a recipe with pears as I have alot of them. This is it!

Mongo Guisado (Mung Bean Soup)

Om my gosh - excellent! I've never cooked mung beans before, always just sprouted them. I had no idea how delicious they are - they look like lentils when cooked but taste like black eye peas. I used vegetable broth rather than chicken broth, but otherwise followed recipe. May be one of my new favorite soups!

Frosted Cranberries

These really are good. I took these to a party and everyone was amazed at how tasty they are. I used agave nectar in place of the egg white (and healthier than corn syrup). How to make them was a topic of conversation at the gathering. Thanks for the recipe.

Sweet and Nutty Moroccan Couscous

This is delicious! I was a little leary about using so much cinammon so I added it slowly, but I ended up using the amount called for. I also substituted cranberries for raisins and toasted pumpkin seeds for the almonds since it was for a fall gathering. In addition, I used coconut oil in place of the butter and that made it really good. Thanks for the recipe.

Meatiest Vegetarian Chili From Your Slow Cooker

I've tried many vegetarian chili recipes over the years and most of them are just lacking. I almost gave up, thinking that chili just needs meat - until this recipe. Awesome! I recommending halving though, unless you need alot.

Apple Walnut Cake

I followed this recipe exactly with the exception of adding a little extra apple to make sure it was moist enough, and it was the dry and crumbly! Tasted alright, but will not make again. Don't like dry cake.
