Chicken Cordon Bleu Casserole
This was just ok for me. I probably wouldn't make it again. If you make the chicken like the recipe call for and don't use frozen nuggets, this seemed like it was actually more work than just making Chicken Cordon Bleu. I would rather stick with the real thing. If I could think of one thing that would make it better for me would be to use something other than bread crumbs to coat the chicken. Maybe more of a traditional flour based breading would have made a difference.

Chicken Pot Pie IX
I really like the chicken pot pie. It tasted just like the frozen pot pies you get in the store but better because of the fresh ingredients. I thought the sauce was plenty and it wasn't dry. I think that if you didn't want the consistency to be so dry you should just cook the sauce less time so that it is a little more fluid. I don't know what having twice the amount of sauce would do since I don't feel like I could fit any more in the pie. I didn't have celery seed so I excluded that. Not sure if it would have made any difference. I also added some diced potatoes to the pot when I boiled the chicken and carrots mixture. I really liked this and will make it again.

Cheesy Ranch Potato Bake
This was pretty good. I think the biggest advantage is that you could make it for a bunch of people at one time. I changed some stuff around like many people did. I added some bacon and chives to the mix. I think I wouldn't have minded just a little sour cream on top when I served it either. Didn't have any on hand so I will try it for next time. It is hard to see this really being on a healthy menu but it is very yummy. I will make this again for sure.
