Low-Fat Lemon Poppy Seed Muffins

I used Stevia in place of sugar....not a good idea. Too sweet, maybe cut back the sugar to 1-cup. Muffins need some kind of fat....maybe a bit of butter. I did not like this recipe. It tasted like something was was wrong like no salt & too many eggs. They stuck to the paper cups really bad even though I sprayed them with oil. Recipe made 18 muffins.

Emily's Famous Chocolate Shortbread Cookies

Absolutely fantastic and to make them double chocolatey I dipped in melted choc chips/Almond Bark. I made them look like biscoti dipped in chocolate. And they freeze great.

Pressure-Cooked Beef Stew

I usually braise our roasts but lately it is hard to find a piece of meat worth the trouble so I thought what the heck lets get out the 10-Qt pressure cooker I have never used. Maybe I can get a fork tender roast yet. So I looked up this recipe in my favorite website and tried it out. Absolutely, the best roast ever. My PrsCookr will get more use now. Don't be in a hurry with this method - it took me 3 1/2 hours total. But worth it.

Parmesan Chicken

Grandma's Lemon Meringue Pie

excellent recipe....even though I forgot the butter it was nice and thick and meringue did stick to crust. I sprinkled it with a bit of sugar before baking. Tastes good too. I was very happy with it and will make this again. Will not sprinkle meringue with sugar next time...does not need any more sweetness. Recipe is perfect the way it is. Needs to sit overnite uncovered to set up somewhere cold. Was kinda "watery" after sitting out the first hour to cool.

Easy Berry Relish

Too tart for me so I added another box of Jello and Pineapple Tidbits with the juice and hot water to make 2-cups water. Threw it all in the blender and back in the refrigerater. Much better now. I might mention that I used altogether two boxes of "sugar free" raspberry gelatin .44 oz boxes.And I always use sugar substitute when cooking/baking anything.

Favorite Old Fashioned Gingerbread

very good with double the spices except the cloves and it doesn't need the applesauce unless you are replacing the butter with the applesauce. I have not tried that yet.

Spanish Rice Bake

Fresh Tomato Chili Sauce

This is a sweet and spicy recipe. I like it but need ideas on how to use it in other recipes. I used 1/4 Tsp crushed red peppers because I didn't have any hot peppers. Plenty of heat for me. I basically cut the recipe in half and made it a bit healthier by using Stevia & Sea salt. Very tasty recipe.

250 calories!! I like that!!! I even left out the spagetti sauce and added tomato sauce instead and it was still yummy. Hate mushrooms so they had to go too.

Cinnamon Raisin Bread II

This is an excellent recipe. We love it. I have been experimenting to make this healthier and find I can add 1/4 cup each of flaxseed meal & wheatgerm in place of flour. (I'm going to try 1/2 cup of wheat flour this time) Also I use 1/8 tsp nutmeg & ginger. Set machine on medium color setting.
