Strawberry Muffins

YUM!! 4 stars simply because I changed it, like everyone else recommended. I added 1/2 tsp vanilla, 1/2 tsp cinnamon, and did half-n-half brown and white sugar instead of adding the brown sugar as extra. I don't like terribly sweet things and these have a delicious flavor without being overpoweringly sweet...although the full amount of white sugar in addition to brown sugar would still be ok I think. I doubled the recipe and came out with 20 muffins. They are moist and delicious! I would love to try using blackberries sometime. Definitely going in my recipe book!

Ambrosia Fruit Salad

Sooo good! I've always liked stuff like this. But I did it quite a bit differently than the recipe, hence the 4 stars. I only put in 1 cup of shredded coconut, 1/4 tsp cinnamon and nutmeg, and I didn't notice until after I'd already bought the cans of fruit that the recipe only called for 8/11-ounce cans. So since I love fruit, I ended up putting in a 20-ounce can of pineapple and 15-ounce cans of mandarin oranges and fruit cocktail. It turned out perfect that way! I even forgot to put the marshmallows and walnuts in before I started eating it, and it was still delicious without them. Will definitely be making this again and experimenting with fresh berries. Mmm!

Homestyle Beef Stew

Tasty and simple! I made a couple changes: I skipped the thyme, and would recommend skipping the bay leaf too. Also, I don't eat beef (vegetarian except for chicken & turkey) so instead I chopped up a can of Worthington Choplets, which is a meatless substitute. I didn't fry them in flour but rather just added them by themselves (they already have their own salty flavor). It turned out great, and I served it to my boyfriend who loved it also. He suggested that next time it would be good as a pot pie filling! So I might try that next... Definitely going into my recipe book!

Delicious Ham and Potato Soup

Tasty and SIMPLE! I made this soup for my boyfriend and we both loved it. The only variations I did was to add chopped carrots, and we don't eat ham (borderline vegetarians), so instead I microwaved and chopped up a few strips of the vegetarian bacon substitute, "Stripples" (you can find them in the frozen section at Wal-mart) and added them last. It was amazing! And I've had potato soup with ham in it accidentally before, and it tastes exactly the same as mine did! So...great recipe even for vegetarians! Next time I might try adding corn also. Definitely going into my recipe book!
