Perfect Apple Pie

I don't even LIKE Apple pie, and I LOVED this!!! I don't know what makes this so amazing, but it's just perfect and received many compliments (including my friend who is a complete health nut and never eats pie) when I made it for Thanksgiving. It's light and tender and the crust is flaky...just all around amazing. Depending on how deep your pie dish it, I would recommend upping the apples to 8 cups and increasing the corresponding ingredients accordingly. Also, pouring excess liquid out of the mixture once the apples have been evenly coated will prevent sogginess, as will spooning the apples in with a slotted spoon. I did a lattice top and brushed it with egg wash and the color turned out nicely. I will use this recipe even without the Pillsbury crust, although the crust is so perfect if I'm in a hurry I can just use the Pillsbury crust. This recipe is a winner for sure!

Roasted Garlic Mashed Potatoes

This is a wonderful base recipe! I doubled the garlic because...well, we love garlic and put it in the over for 25 minutes. I used a 5 pound bag of yukon gold potatoes (minus two that I dropped down the sink...oops!), and the taste and texture was just perfect. I mixed all of the ingredients besides potatoes ahead of time then added it slowly while I was mashing. I cooked the potatoes for about 20 minutes (this will vary, of course). I used a hand masher for a more Southern texture. I made these for Thanksgiving and got compliments from everyone, including my husband who doesn't like potatoes and my brother in law, who said these were very flavorful. These are a bit more time consuming than the old butter-and-milk standby, but definitely worth the extra effort. Thank you!

Fruit Pizza II

Delicious! I changed the crust and filling to make a pie instead of a pizza, but the glaze and base filling recipe were AMAZING! Just make sure you thoroughly mix the whipped cream and cream cheese so there are no cream cheese chunks. Thanks for sharing, Kay!

Pumpkin Pie French Toast

This is a very delicious and sweet breakfast treat! I made this for my husband and I this morning and he LOVED it! It was a bit sweet, but that's probably because I put too much syrup on it. :) I used pumpkin butter instead of pumpkin puree for a little extra spice, and didn't have any half-and-half so I used 1/2 whipping cream and 1/2 skim milk. This is a great fall/winter breakfast, and I'm sure little ones would love it too. Thank you for sharing-this is so creative!

Perfect Pumpkin Pie

My husband said this is the best pumpkin pie I have ever made...and I've made quite a few! It's a great combination of pumpkin, spices, and sugar-not too much of any of the above. This is definitely a keeper!

Pumpkin Pecan Cheesecake

In one word: AMAZING! This is actually fun to make (and not too complicated once you make the pumpkin butter) and tastes amazing. It got rave reviews from everyone who tried it. I doubled the topping as recommended and it added a lot of sweetness and crunch. I would recommend making a homemade graham cracker crust-it adds a lot of personality. It has just the right amount of pumpkin flavor, too. Thank you, Eleanor! :)

Simple Garlic and Basil Pesto

Easy and delicious! Both my husband and I love this. We omitted brazil nuts because they weren't available at any local stores, but it was still amazing. Great to mix in with ricotta for stuffed shells or with pesto chicken pasta.

Broiler S'mores

Thank you for sharing! I have tried microwaving them before, but the graham crackers burned. This is a perfect alternative! They turned out wonderfully. We did use one bar (so each S'more received 1/4 of a bar, instead of 1/2) and one large marshmallow for each S'more. Play around and see what works for you. The toasting technique is great, and the heat from the marshmallows' heat do melt the chocolate. Thanks for sharing!

Sugar Cookie Icing

This is perfect! I do use vanilla extract because I dislike almond extract. You can vary the thickness to do piping and designs on wax paper, then transfer them to the cookies. Just fantastic!

Chocolate Peanut Butter Squares

DH is the biggest Reese's Cup lover, and he said these were better than Reese's! I added 1 3/4 graham crackers, but the chocolate didn't stick to the peanut butter in some areas, so I might try the recipe with the regular amount of graham cracker crumbs next time. I added the peanut butter in to the melted butter first, then added the dry ingredients (which I had mixed together in a separate bowl per another reviewer) and that worked very well. I also lowered the amount of butter in the chocolate part from 1/2 cup to 2 tablespoons, and it still came out deliciously. I don't normally like Reese's and these are AMAZING! They're similar but much better. I'm taking a container of these to the office today, and I'm sure they will be a big hit. Thanks for this recipe! :)

Marinated Ranch Broiled Chicken

AMAZING! Thank you so much for this recipe! It's so easy and delicious. My husband says it's his new favorite recipe. The fact that it's very healthy is an added bonus! I substitute white wine vinegar for red wine vinegar (personal preference) and put equal parts olive oil and vinegar (to reduce the cost a bit). This is pretty much the perfect chicken recipe-easy, cheap, delicious, and health!

Green Beans with Bread Crumbs

I've made this recipe a few times for family gatherings, and they always get rave reviews! More than a couple of people have asked me for the recipe. You do have to make sure to not overcook the green beans, but even if you do, it still tastes good. I add in some onion powder and double the garlic powder (or add in minced garlic). They do not make good leftovers because they get soggy, but they taste so good that there are usually no leftovers.

Apple Crisp II

Make this-you won't regret it!! I made it for a group of friends coming over, and one commented that this was better than apple crisp at one very famous southern/country cooking restaurant chain. I did add some allspice and cloves (I didn't have nutmeg on hand, or else I would have added that), doubled the topping (so glad I did!), and reduced the water to 1/4 cup. It was perfection! I used Gala apples, but will use Granny Smith next time. Add a scoop of ice cream on top and you have the perfect desert! It was easy to make and I had all of the ingredients on hand. Thank you so much for sharing this recipe! It's delicious.
