Nutty Apple Crisp

I took the advice of the other reviewers and added more apples, 7 cups. I also mixed in a 1/2 pint of organic blueberries with the Corland apples. Other changes i made - I doubled the oats and added 1/4 cup more flour, reduced the nutmed to 1/2 teaspoon and added 1 teaspoon cinnamon. The crumb topping was just the right amount (it wouldn't be enough if i followed this part of the recipe) however, it was way too sweet. Still edible, but you can easily have used 1/2 to 3/4 cup brown sugar. I cut in the butter with a pastry cutter, and set it aside while i prepared the fruit. When i assembled the crisp i first squeezed a handful before gently breaking it up on top of the fruit. This makes a chunkier crumble. The nuts definitely puts this recipe above all others, and the blueberries added another fruit dimension. With the small adjustments, this is an excellent recipe!

Downeast Maine Pumpkin Bread

Excellent bread! I was inspired to bake my own after paying $2/slice at Starbucks. Wow! I followed the recipe exactly and baked it in two 8 1/2" L x 4 1/2"W loaf pans. It took 1 hour 10 minutes to bake to perfection. While perfect as is, i may try sustituting part of the oil for applesause next time, only to make it healthier.

Sturdy Whipped Cream Frosting

Excellent light frosting both in taste and texture. Didn't taste too cream cheesy (think carrot cake) but there was still a mild tang from the cream cheese. I was going to use other reviewer's suggestion of powdered sugar, but turned out i didn't have any in the pantry. Turned out that regular white granulated sugar does not make the frosting gritty at all! Right amount of sweetness using what recipe called for. A note that this recipe did not yield enough to frost a 3 layer cake, no crumb layer possible, so cake had small flecks of chocolate cake coming through. I needed to strategically decorate cake with fruit to conceal these issues. I made recipe using light cream cheese that was much softer than regular fat cream cheese right out of refrigerator. I believe full fat would yield a frosting that would be sturdier and pipeable. I will use full fat next time. I also used "heavy whipping cream".
