Crustless Spinach Quiche

I have made this for 2 brunch parties, and both times it was a hit. If you like spinach and eggs - this will not disappoint. I found that Muenster cheese is a bit pricy, and you have to shred it yourself (something I am not a fan of). Shredding 2 cups took awhile, but it was worth it in the end! Also, I only used 1/2 cup finely chopped onion... which was less than 1/2 yellow onion. I suppose the amount you use is a personal preference, or maybe I just had a huge onion!

Crab Stuffed Flounder

I am so glad I went with this recipe!! I was really nervous about making it, but it was much easier that I expected. Really took no time at all to prep. The egg sauce on top was the perfect touch. I added my own special seafood seasoning to the fish, but it would have been amazing even without it. I made a couple other changes - I used ritz crackers instead of saltines, and did not use paprika. I also used 2 cans of crab. My husband was freaked out that I was using canned crab, but once we ate it, you absolutely could not tell. I cannot wait to make this again!

Baked Asparagus with Balsamic Butter Sauce

This recipe added great flavor to a pretty boring vegetable. Do not even bother keeping the left overs though, the asparagus does NOT hold up. The left overs were soggy and just tasted like soy.

Grandmother's Buttermilk Cornbread

This cornbread was absolutely amazing!! I followed the recipe exactly, and it turned out amazingly well. It was so moist and tasty, that I found no need to add any butter to it when eating it. We were eating the leftovers a few days later - and it was just as good as the first day!

Rich Chocolate Frosting

I made 1/4 batch of this recipe, smothered it on top of 24 cupcakes (1 box mix), and had frosting left over. I would definitely consider how much frosting you need before making an entire batch. I would also recommend using the heaviest milk you can. The frosting was definitely tasty, but not quite good enough for a full 5 stars :)
