Slow Cooker Macaroni and Cheese I

Unlike many others I really enjoyed this recipe almost as is. The only thing I did differently was use 1 egg instead of 2. I also put it on the crock pot for 90 minutes to 2 hours on high. This was great. I like a more custard-like macaroni coming from the south.I honestly think it was set up enough without a second egg. The only thing I feel like it was missing some type of seasoning. I didn't have paprika on hand, but I bet that would of made if 5 stars instead of 4! Great base recipe though very cheesy. It was winner for Christmas dinner!

Beef Enchiladas II

Yum! This was delicious. I did make some alterations. I used taco seasoning in the meat, corn tortillas instead of flour, and canned enchilada sauce instead of dry. This was cheesy, saucy, and delicious! I look forward to eating the leftovers.

Spicy Tomato Bisque with Grilled Brie Toast

I thought this soup was good but could use some adjustments. I also used the 1 can of tomato sauce and 1 can of diced tomatoes instead of the puree. I would of cut in half the amount of cream cheese (and perhaps use a little more milk to compensate) I used because I think it conflicted too much with the tomato and basil flavors of the soup. I think this a great base recipe but needs to be adjusted for personal taste. I didn't make the brie toast since I am not a fan of rye or brie. I ended up making garlic parmesan toast which I think worked great! I will use the recipe again, but I would just lower the amount of cream cheese.

Green Chili Stew

This recipe is excellent! I made this for my boyfriend who is from New Mexico and was missing his childhood favorite. I have never had this before and both of us LOVED it. We had it for dinner one night and ended up making it later in the week because we loved it so much. The only changes I made was I used 2 cans of tomatoes w/ green chili peppers and 2 cans of green chili peppers. I also ended up letting it simmer after I added the potatoes for an hour to hour and half rather than 30 minutes. 5 stars! I'm going to have the rest for lunch today.

Chuck's Favorite Mac and Cheese

This recipe is great and easy. I didn't have problems with it being dry like others though. I did use about half the amount of breadcrumbs than the recipe suggested. The macaroni came out very cheesy and delicious. The only reason it isn't 5 stars is because I feel like it is missing something. I'm not sure what perhaps some other spice or something to give it some flavor.

Easy Lasagna I

This is a great and easy recipe. I ended up using 2 bottles of spaghetti sauce because I personally like it more saucy than dry. I also added a little garlic powder to the cheese mixture. This was delicious. It tastes great as leftovers and even taste great cold.
