South Carolina She-Crab Soup

Reviewed: Jun. 22, 2015
I followed the recipe to a T and it was very bland. I added about 2 tablespoons of Old Bay Seasoning and 2 teaspoons of Paprika. The soup never truly thickened up. If I would make this recipe again I would add only 1 qt of half and half at first. I would then thin the soup or brisque with the remaining half and half. I also wouldn't "cover and simmer" again because by covering, the liquid doesn't leave the pot.

This is so yummy. I have made this one time with raisins, but I prefer it without the raisins. I'm not a raisin lover.mimhave made this everlasting times and it's always requested at pot lucks.

Dorm Room Chili Mac

Reviewed: May 13, 2015
My husband liked it, I felt it was missing something. It was fast, used on hand ingredients and was super easy to make. I added a little onion and garlic powder to the chili (Hormel with beans ). I'll make this again but add hamburger and chili beans to it instead. In a pinch, this is a good recipe to feed a family on a busy night.

Didn't use the eggs or flour, I loved it my husband thought it was good but not great. I added bacon to the top 5 minutes to the end with the French onions. I then garnished with green onions. Yumo

Baked Potato Soup V

Reviewed: Feb. 25, 2015
Okay, everyone will probably get mad bc I changed the recipe just a tad. I peeled, diced, and boiled my potatoes in chicken broth until they were tender. I also made a roux with the flour and butter. I gradually added the milk and would whisk the white sauce as it thickened. I also added some of the potato water with the chicken broth to the sauce( maybe 2 cups total) My husband and I love cheesey potato soup so I diced a 1/3 log of velvetta (bc I like to use velvetta in soups and sauces). I added the cheese a little at a time to incorporate it into the sauce. When the sauce was done, I mixed the potatoes and the left over 2 cups of broth into the sauce. I let it simmer on the stove for 30 minutes and added the sour cream. I served the bacon, green onions and shredded cheese on the top. It was divan. The only difference was adding the cheese and broth. I would have to say the next day it was thick but still yummy. It's the best potato recipe I have found so far and now I am done looking.

Eggplant Parmesan with Fresh Basil and Smoked Mozzarella

Reviewed: Feb. 24, 2015
I drained pressed the eggplant like the author suggested and fried in small batches. I did peel my eggplant. I discovered that I don't really care for eggplant. Imserved it over angel hair pasta. I also would add another jar of sauce or use a large jar.

Tater Tot Taco Casserole

Reviewed: Dec. 2, 2014
This was yummy! I used the 10 minute enchilada recipe from this site because I didn't have any. I added garlic bc I add garlic to everything. That was I all that I changed. My husband is really picky and he loved this recipe. Thank you very much. Oh, I put potato crowns on the top as well.

Cream Corn Like No Other

Reviewed: Nov. 30, 2014
I found it here was a tad to much liquid as I made the recipe as stated. I had to add corn starch to help thicken it up and it still had a lot of liquid. Next time I may cut down on the cream to decrease the amount of liquid. It had awesome flavor and my family loved it. That is all that matters when trying to please foodies. It needed more salt and pepper for our tastes. It makes more than a "typical can" of creamed corn so I may scale down the recipe next time.

Sausage Stuffed Mushrooms II

Reviewed: Nov. 30, 2014
OMG! These are divine. I halved the recipe because I was splitting the sausage with stuffing, but, WOW! These were gone in 3 minutes flat. I added a bit of cheddar cheese to the cream cheese and sausage but these were awesome. I will make these again. The plus side is they were super easy, you can make ahead and pop under the broiler.

Horseradish Pork Chops

Reviewed: Nov. 4, 2014
I cooked mine over a few slices of onion and used 1/2 c of panko and 1/4 c od bread crumbs. It was awesome. It smelled delicious and tasted pretty good. Cooking time is dependent on the thickness of your pork chop.
