Fluffy Pancakes

Delicious Ham and Potato Soup

This potato soup is okay, but I must admit, with a 5-star rating, I'm a bit disappointed. I've had much better, richer tasting soup.

Whole Wheat and Honey Pizza Dough

I wanted to try a whole wheat crust because it's so much healthier and this recipe is not bad for a whole wheat crust, but it's just not good enough to replace a traditional pizza crust.

This soup is great. I used beef broth in place of water because I had it on hand and figured it would add flavor. Be aware that the spiciness of the salsa you use will determine how spicy the soup is. My soup was a little too spicy for my kiddos (they added a little cooked rice to temper the heat and gobbled it up) so I'll be sure to use a milder salsa next time. My husband has tried lentil soup in the past and didn't care for it, but he liked this one. I'll definitely make it again.

Buttery Rolls

Great recipe!! I've made this twice and have found it to be very forgiving. The first time, it didn't mix well and I didn't have much hope that it would turn out well. I took the dough out of the bread maker and had to knead in extra flour. It still turned out great. The second time, I checked the dough after 5 minutes and made sure it was mixing well (I had to give it a stir) and it turned out great once again. My family devours these yummy rolls!

Corn and Black Bean Salad

The dressing is fantastic. I've made this several times, and prefer to add a little pico de gallo to the mixture to use the the recipe as a bean salsa (a little chopped tomato would work well, too). It's great served with tortilla chips.

Oatmeal Peanut Butter Cookies III

My husband called these "homemade nutter butters"! I made a double batch and took them to a cookout. Everyone loved them and asked for the recipe. I'll definitely be making them again-- I think they'd be a hit at a cookie swap.

Cheesy Ham and Hash Brown Casserole

I made this dish to use up some leftover Easter ham. I didn't need 12 servings so I used half the ingredients and baked it in a smaller dish. It was delicious- as my daughter said, "It's a keeper."

Brisket with BBQ Sauce

I used a smaller brisket and ,therefore, cooked it for less time. I used my own sauce but otherwise followed the recipe. The meat turned out moist and flavorful. Thanks!

Creamy Au Gratin Potatoes

I made this to go with Christmas ham and it was very well received. Per other reviews, I minced and sauteed the onion before adding it to the layers and used additional salt and pepper. I also used a combination of cheddar and asiago cheese because it's what I had on hand. As others have commented, I recommend removing the foil 15 minutes before removing the potatoes from the oven- the top became golden brown and crispy around the edges. YUM!

Unbaked Chocolate Oatmeal Cookies

I love these and they are one of my daughter's favorites! I use 1 1/2 cups sugar, stir in the cocoa after the sugar dissolves and boil. I also add a little vanilla. YUM!

Cheesy Baked Eggplant

After reading previous reviews, I sliced the eggplant and let it sit for a few minutes before proceeding. Then I brushed it with a combination of olive oil and italian dressing before baking. I layered the ingredients using each twice. The dish is tasty and the presentation was nice. Thanks for a great recipe.

Baked Salmon II
