Hot and Sour Chinese Eggplant

We doubled the sauce, used rice wine vinegar instead of red wine vinegar, and used a small can of green chilies instead of fresh. We actually made this twice in a week's time, once with japanese eggplant and tofu and the next time with just tofu. It was so good!
