Romantic Chicken with Artichokes and Mushrooms

I first cut up the chicken into bite size pieces and sautéed, then added mushrooms,sliced heirloom tomatoes, minced garlic, onion,kale, artichokes,capers and a Hungarian pepper. I used a cup of Sauvignon blanc, liquid from artichokes and a little organic chicken stock. I served this over Israel pearled couscous and quinoa. Very good!

Slow-Cooker Corned Beef and Cabbage

This recipe was so good!! I put everything in the crockpot except the cabbage with a beef boulion cube and water (didn't bother with beer)cooked on low the whole day from 8-5 then when I got home I through the chopped cabbage on top and turned up to high for 45 mins. Perfect!!

Seven Layer Taco Dip

Brought this to a bday party and it was the first thing to go! Here are the layers: Layer1- refried beans,layer 2-package of hot taco seasoning,a jar of sour cream and one cream cheese blended together,layer 3- medium taco sauce, layer 4 - lettuce,layer 5 - tomato,layer 6- cheese,and layer 7 sliced olives.

Roasted Brussels Sprouts

I made this with meatloaf tonight. I halved them and baked next to the loaf at 350 for 30 mins, turning once half way thru. So simple and delish!

Asian Lettuce Wraps

I love lettuce wraps but tried to make it healthier, so I used ground turkey, none of the oils, sautéd the onions peppers and garlic in the little fat from the turkey,put a few shakes of worchester,soy,hoisin sauce and chile pepper sauce. Put a spoonful on top of a bed of baby spinach and topped w shaved carrots and bean sprouts. So good!!

Fish in Foil

I love making tilapia this way-season the fish with salt,pepper and garlic powder, cut up zuccini and yellow squash, dice up a plum tomato and jalopenos. throw it all in the foil on top of the fish,drizzle with a little EVOO, lemon juice and a splash of your fav white wine,(maybe a dash of dijon mustard too!) top with a few capers, throw it in for 20mins..awesome!

Sassy Chicken Enchilada Dip

I have made this a few times now for partys and its always a huge hit! Added a bit more chilli powder and blended the cream cheese and spices with hand mixer first, than added chicken ,onion and tomatoes. Also added a minced jalopeno for kick! thanks for the great recipe!!

Rempel Family Meatloaf

What a great recipe-thank you Connie! Based on other reviews, I used ground turkey (I never use beef), added minced some garlic and jalopeno for kick, and half an onion. I also added more of the ketchup glaze on top. Yum!!
