Crumb-Coated Cod

The flavor was excellent. We all really liked it. I think it should have been turned over half way through cooking and will try that next time. I also had trouble getting the stuffing mix to adhere to the fish though. I tried dredging and ended up pressing it in but it still didn't coat well. It might have been because I had to use seasoned bread crumbs that I kicked up with a few more herbs. I was unable to find a Stove Top at my local market that did not have chicken in it and my son is allergic to all poultry. Possibly that was my problem, different texture maybe? I am not familiar with Stove Top so I don't really know. I will be making it again.

Hot Fudge Ice Cream Bar Dessert

I made this today for a family barbecue with all my kids and grandkids. Received rave revues, even from the non-sweet eaters. I did use crushed Heath bars instead of peanuts because my daughter can't eat nuts (but she can eat peanut butter, go figure). 2 pieces left over, and I bet they'll be gone by morning. I also used hot fudge sauce instead of chocolate sauce. Next time I won't be so lazy and I'll make my own hot fudge though.

Pork Chops and Cheesy Scalloped Potatoes

I did make some changes. Paid attention to the reviewers that said it was bland. Added 1/4 teaspoon of cayenne to the cheese sauce. Also had boneless chops and I didn't want them to cook as long as the potatoes. I seared them and put them on the top, this kept them from having too much cheese on them. I also seasoned them highly with Natures Seasonings blend, my favorite for pork chops. Everyone really liked the dish, and said make it again. Potatoes cooked about 6 hours on low, and were not mushy at all, chops about 4 1/2 hours. Served with green beans.

Amazingly Easy Irish Soda Bread

This is a easy and very forgiving recipe. I have made it 3 times now, and the first 2 I made mistakes. The first time I misread the recipe and melted the margarine before adding it to the flour mixture, it still came out terrific. The second, I got distracted and doubled the butter and didn't realize it until I was almost ready to bake. I doubled the rest of the ingredients, made two loaves, and they were both excellent. Actually did it right the third time and it was wonderful. I've taken leftovers to work and gotten marriage proposals from men half my age LOL. I make it often.

Pretty Chicken Marinade

Herb and Chicken Pasta

I made this tonight for my husband. 36 years of marriage and I have NEVER heard him rave about a recipe like he did this one. He must have said "this is good", "this is great" a dozen times while eating. He also said it was better than anything you'd get in a restaurant. The only change I made was to scale it for two, and omit the salt, because the Cajun seasoning I used has more than enough in it already. I do like the idea of more chicken broth though, and I will try that next time. Might make it 6 stars!

Maple Bacon Pancake

Tried this morning, even though it sounded a bit strange. Doubled the bacon and put half into the batter. Used my 9 1/2 inch, deep dish pie plate. Baked at 375 for 20 minutes. While it was baking I cooked up some scrambled eggs until just short of done. After 20 minutes, I removed the pancake and added the partially cooked eggs on top, sprinkled them with cheese, and added the rest of the bacon and put it back in the oven for about 5 minutes. Everyone, but me, had seconds, so fed four of us. It was a nice change. Next time I might use a little more syrup in the batter and omit the sugar. We did not feel the need for any extra syrup on top.

Boston Brown Bread III

Terrific, my Cali bred grandkids love it. I'm from Mass and it was always served with beans and hot dogs. Couldn't find the canned anymore locally and tried another recipe (not right), then this. An added bonus. I have a dog that's on regular medication, this subs well for those expensive "pill pockets" that are sold. Just roll a little around the pill. LOL, you can keep leftover in the freezer and just thaw enough for a week or so. A little sweet, but overall, healthy.

Orzo with Parmesan and Basil

I make this often, it is easy, fast and cheap! (Important, my husband and I are both unemployed). I usually make it as written but have used dried basil when my basil plant is depleted or I'm feeling lazy.
