Chile Rice Casserole

I really liked this recipe. Thanks Michelle. I always try recipes on this website AS IS FIRST. While the "as is" recipe is great, being from New Mexico, I KNOW chile. The second time I prepared this dish, I added 3 diced, fully cooked chicken breasts, seasoned the soup with a minced garlic clove and added fresh cracked pepper, and 1/3 cup minced shallot. The result, YUUUUMY.

Tomato Pork Loin Chops

Excellent recipe Mlyn!!! My Boyfriend HATES oregano, so I was very hesitant about your recipe. He stopped short of licking the plate!!! Keep the recipes comming. I did not want to cook that night, but after very careful reading, you just brown, boil add chops and simmer. It doesn't get any simpler than that.

Chicken Breasts in Caper Cream Sauce

Femeril LOVES this dish!! My Boyfriend really liked it too. It is relatively easy to make and there is only one issue. There isn't enough sauce at the end of the cooking process. The sauce is so good...you are gonna want to rub it all over yourself!!! I didn't think that it was going to turn out very good but WOW!!! I'm making this dish for a dinner party that we are having this weekend. Thank you for an EXQUISITE recipe MOMMY!!!

Chicken Dijon

EXCELLENT dish. Remarkably easy and quick to prepare. I made it for the first time last weekend for some friends of ours. I was skeptical, but one of them asked me to prepare it again at our next dinner. I did, however, add 2 small cloves of garlic. Femeril loves garlic.

Femeril gives this a 3 star rating. Add some garlic-according to your taste and may be some white pepper. It was rather dry so consider a white wine reduction and some parmesan cheese or parm/romano cheese.

Chicken Scampi II

My Boyfriend does not comment on any meals that I prepare for him...This one got him to speak. I added a clove of garlic to the sauce and it turned out GREAT!!! I have assumed the role of chef and I have to say I LOVED this meal. It is so simple to complete yet tastes as if I laboured over the production process. Thanks CYNDEE!!! Keep those recipies commin. I'll be keeping an eye out for your recepies!!!

Tender Tomato Chicken Breasts

mmm, MMMMMMMMMMMM. Delicious!!! My boyfriend works odd hours and I work part time. The ingredients are all around the house (ours at least) This dish is quick, easy and improvisable. I used a little garlic in mine and he LOVED it. As I get more aquainted with this great website, you will find that Femeril likes garlic and salt and spices. As far as this particular dish is concerned, I made this according to the instructions and placed each chicken breast on a bed of fetuccini and sprinkled some parmesan on top. This is a BIG hit for the individual, or the busy couple. YOU MUST TRY THIS DISH!!! Ok. 2nd time I tried this 3/9/10-I minced a SMALL shallot and a "small" (according to Femeril) clove of garlic, which I added at the add tomatoes stage, cooked as instructed and it came out delicious. My boyfriend loved it. Next time, just use a 12 oz can of diced tomatoes-DRAINED-and use the chicken broth and you're set. At the presentation stage, I served this on a bed of angel hair pasta, sprinkled fresh grated parm/romano cheese and garnished with a pinch and a half of dried parsley.

Fresh Asparagus Risotto

Good God!!! This is FANTASTIC!!! Cooking this dish is EASIER THAN IT LOOKS-reading the directions. I must say though, I tried to reduce the amount of salt by about half of what the recipe called for and found that the second time I made the dish for a dinner party-which everyone positively commented on the dish-I used the required amount of salt and it came out PERFECT. My boyfriend usually does all of the cooking, and I looked this up and decided to give it a try and he loved it. I am going to try using a bit of garlic in the next attempt, but if you want to impress your friends or just treat yourself, TRY THIS!! You'll see. 3/5/2010: I added a minced clove of garlic and WHAT A DIFFERENCE! My boyfriend baked 2 salmon fillets and I made the Risotto. This is an excellent accompaniment. A nice dry chardonnay is definitely a must. I will say that you must portion out and do all of the prep work before starting this dish. The pepper, salt and cheese can be placed in ONE condiment dish as these are among the final ingredients added at the last stage of the process. Whomever submitted this recipe, THANK YOU SOOOOO MUCH. I will be keeping an eye out for you!!!
