Easter Leg of Lamb
Oh, this was so good. I thinly sliced and caramelized the onions instead of putting them in raw. Cooked the lamb longer and slower - used an electronic thermometer probe to 150, then turned off the oven and let it finish for about 20 minutes. Made a gravy with the juices cut with chicken broth - added herbs and a bit of montrachet goat cheese to the gravy. The family is begging me to do it again.

Louisiana Sweet Potato Pancakes
These are awesome made with leftover sweet potatoes from Thanksgiving. Fabulous topped with leftover cranberries. I'll have to make another batch, because husband and son ate each one as it came hot off the griddle - just as they were. My son said they taste like pumpkin donuts (I always add brown sugar, Marshmallows and Cinnamon to my Thanksgiving Sweet Potatoes). Just weigh out the leftover sweet potatoes and follow the recipe. Try topping The resulting fluffy and delicious pancakes with cranberries, a dollop of vanilla yogurt or sour cream and roasted pecans.

Grandma's Lemon Meringue Pie
My husband is a huge fan of lemon meringue pie, and this one won the biggest thumbs-up. Don't be afraid to cook the filling for awhile after the yolks are in. Let it get nice and thick. Tastes better (caramelization), and sets better. I followed the suggestion to add a bit of sugar and vanilla.
