Due to varied ingredients that I had, I made some modifications. I halved everything since I only cook for one. Boiled the chicken and shredded it. Combined chicken with the cheese, onion, and sour cream in a large skillet until melted. Then added a packet of taco seasoning and about half a cup of water. Mixed everything up well. Added garlic, green pepper, and some green onion. Let heat up for a few minutes. Added 1 can of enchilada sauce, and cooked all together on low for about 10 minutes. Then spooned into tortillas, folded, and rolled. Used a glass baking dish with another half can of enchilada sauce spread over the bottom. Placed in rolled enchiladas. Then covered with remainder of the enchilada sauce and more cheese. All in all, pretty good. Easy to make too.
