Cranberry Orange Cookies

Reviewed: Dec. 10, 2011
Definetly need to use more flour....they spread even after I kept them in the fridge to chill. Or, instead of 1 cup of butter, next time I will use 1/2 butter and 1/2 margarine. I ended up adding 4 total cups of flour. Also added white chocolate chips to the dough....YUMMO!

Caesar BLT Wraps

Reviewed: Jul. 22, 2011
Easy and quick wrap! Made my own dressing, though. 1 cup mayonnaise, 1 tbl. lemon juice, 1 tsp. worcestershire, 1 clove garlic (minced), 1/4 tsp. salt, 1/8 tsp. pepper, 1/2 cup Parmesean cheese and 1 tbl. milk. Delicious!

Pretty in Pink Sangria

Reviewed: Jun. 13, 2011
Awesome! I made this for my sister's bachlorette party & it was gone in less than 30 minutes. I didn't have the recipe in front of me...so forgot the pineapple juice. I also used lemon-lime soda instead of the gingerale. Perfect sweetness! I think that the pineapple juice might have made it too sweet! I used fresh stawberry slices that I froze in single layers in a glass pie pan seperated by wax paper sheets. PERFECT!

Pan Seared Lemon Tilapia with Parmesan Pasta

Reviewed: May 15, 2011
The seasoning gave this bland fish some kick, but I don't think I'll be buying Tilapia anytime soon. The pasta accent was a different spin on buttered noodles...the kids loved them.

Caper Baked Chicken

Reviewed: Feb. 5, 2011
Pretty good! I changed it up a bit....used olive oil instead of butter, 2 Tbsp. lemon juice, cut the steak sauce in half (A1) & marinated them in the sauce prior to browning in the skillet. They were moist & tasty. Next time I will add more capers.

Rosemary Ranch Chicken Kabobs

Reviewed: Jul. 14, 2010
Very tasty! I made extra marinade & drizzled a small amount of brown rice before serving with the kabobs on top. Delicious! On the kabobs, I used green peppers, onions & chicken.

Ramen Coleslaw

Reviewed: Jun. 20, 2010
Pretty tasty! I used brocolli slaw instead of regular shredded cabbage (much prettier presentation). I added the dressing immediately before serving. When I make this again, I will probably put the dressing on about 20 minutes prior to serving. It was a bit too crunchy with putting the dressing on right before. Also, I substituted olive oil for the vegetable oil.

Spaghetti Pie III

Reviewed: May 3, 2010
Pretty good meal, but just lacked a something. I didn't have any green pepper, so maybe that was it. I think I would only saute the onions and green peppers for the last few minutes of the beef cooking. It needed a little crunch. Overall, good recipe & the family gobbled it up. Served with garlic bread and a side salad.

Bacon-Roasted Chicken with Potatoes

Reviewed: May 2, 2010
This was a good recipe. However, I took some of the advice from other reviewers, & it took MUCH longer than 40 minutes @ 400 degrees. I think I ended up cooking it over an hour -- the potatoes weren't soft enough. I didn't have any adobo, so I added 1 Tbl. of Italian Seasoning. Served with a side salad and fruit. Super easy!

Jalapeno Popper Cups

Reviewed: Apr. 25, 2010
Yummo! This was a great app to bring for a game night get together with friends. I doubled the recipe & it made 30 mini phillo cups. I used the frozen mini cups from the freezer section. I also you fresh turkey bacon, but only put it on half of the apps. On top of tasting good (& a bit spicey), it was a nice presentation.

Slow Cooker Chicken Taco Soup

Reviewed: Apr. 25, 2010
I will not make this again. : ) Easy prep, but the finished product was not good....could totally taste the beer. If I were to make this again, I would definetly ditch the beer & use chix stock instead. Horrible after taste. I ended up using some of the leftovers in quesadillas (w/out the liquid). It added a healthy bulk (beans/chix/tomato) to just plain cheese quesadillas.

Best Steak Marinade in Existence

Reviewed: Apr. 19, 2010
YUM! This marinade was delicious! Perfect. The only think I might change next time I use this is a little less olive oil....maybe 1/4 cup. I grilled it on high for approx. 5 minutes, turned the heat down to med & grilled another 5 minutes. Turned the steaks and contiued grilling on med for about 7 minutes. Will definetly use this marinade again.

Sour Cream and Chive Mashed Potatoes

Reviewed: Apr. 17, 2010
Yummy potatoes! I used red skin potatoes, boiled them for 25 minutes and then used my hand held mixer to make them smooth. I added the fresh chives last...very good.

Roasted Garlic Lemon Broccoli

Reviewed: Apr. 11, 2010
Good tasting broccoli! My family likes broccoli to begin with, but this added a little bit extra. I probably will add a little less olive oil & maybe use either light cooking spray or I can't believe it's not butter spray to cut some of the fat to a healthy side. Very good!

Spicy Garlic Lime Chicken

Reviewed: Apr. 10, 2010
Great entree! I didn't have any thyme (or time). This was a quick, easy & tasty recipe. I didn't add any butter, but instead used only olive oil. I also added poultry seasoning. It was delicious....even my 10 month old ate it. Served it with the Lime Cilantro rice. Will definetly make again - YUM.

Asparagus with Parmesan Crust

Reviewed: Apr. 10, 2010
Very good side dish! I followed some of the previous raters advice & cooked the asparagus @ 450 for 7 minutes w/out the parmesan and then added the cheese and cooked it an addt'l 4 minutes. Perfect!

Lime Cilantro Rice

Reviewed: Apr. 10, 2010
Easy and flavorful side dish! However, it was slightly too limey. I did not add the lime zest, but did use 2 Tbl. lime juice. I think I will cut the amount of juice to 1 1/2 Tbl. next time I make it.
