Chicken Alfredo with Fettuccini Noodles

Reviewed: Aug. 17, 2014
This was very good. However, I think it had a bit too much ricotta and was bland. So I seasoned the chicken well before I sauted in butter. Family loved!

Baked Zucchini Squares

Reviewed: Jun. 8, 2014
I agree with some of the others, it was a little "soggy" but the flavors were good! I also tried to get most of the water out of zucchini and I used only 2 eggs. I also only used 2 medium zucchini. If there was a way to make it not so soggy, I would LOVE this because the flavors are great!

Very very good. However I would skip the vinager next time I make. I don't think it needs it. I will for sure make again :)

Easy Vegetable Pot Pie

Reviewed: Aug. 25, 2011
Excellent! I was a little nervous how this would turn out, but it is very very good. I would next time cook the bottom crust like the other reviewers suggested, but even without doing it it was fine after it set up. I used fresh pie crust and there is really such a variety of veggies and soup variations you could switch up using. I will make again!

Creamy Coconut Cake

Reviewed: Jul. 5, 2011
Delicious! Family loved it and will make again for sure. I also made as a layer cake. I took advice from another reviewer and poked holes with a fork. I thought that the coconut cream/condensed milk mixture was way too much, I only used about 1/4 of it and it was fine. Toasting the coconut added amazing flavor also. This recipe was so good that I think next time I will whip my own cream for it! Excellent!

Eggplant Croquettes

Reviewed: Jun. 29, 2011
Excellent! Like your own personal veggie burger! I put mozzerella cheese instead of cheddar. I will make again and next time use a red pepper sauce to go with it. Very very tasty!

Steak on a Stick

Reviewed: Jun. 8, 2011
Very very good recipe......The flavor was very good and family enjoyed. Just need to be careful when broiling not to burn since it is thin...probably less then 3-4 minutes as stated in the recipe. Will make again!

Mongolian Beef and Spring Onions

Reviewed: Mar. 27, 2011
Very good! The only change I would make next time I make it would be to add less soy sauce or use a reduced sodium soy sauce....but will make again, family enjoyed. I also took the advice from another and prepared meat first and let sit in corn starch, then started sauce. Great recipe!

Uglies

Reviewed: Mar. 15, 2011
LOVED this recipe! I ended up making a full dozen and still had meat left over. I also didn't put as much bbq sauce in, only about 1/2 cup and it was very good.....kids loved it. Will make again.

Slow Cooker Chicken and Dumplings

Reviewed: Feb. 3, 2011
This recipe was tasty, but as the others have noted the biscuits took well over 30 minutes, closer to an hour to cook. I also used chicken broth for the liquid instead of water and I'm glad I did because I wouldn't think there would be any flavor with just the water. But overall a good recipe and I would make again, but cook the biscuits for at least 90 minutes.

Garlic Cheddar Chicken

Reviewed: Jan. 10, 2011
Very good.....flavorful! The only thing is I used only 6 chicken cutlets and I found I needed more breadcrumbs and cheese, maybe even could have used more than 1/2 cup of butter too. But the flavor was great and chicken was very moist.....will for sure make again!

Banana Cream Pie IV

Reviewed: Jan. 4, 2011
This pie was delicious!! I made it for New Year's Eve and it was a hit. I listened to the other suggestions of using 1 small box of pudding and 1 large box keeping to 2 cups of milk. I also used a premade Vanilla waffer crust....I will definetly make this pie again and often!!

Kelsey's Favorite Stuffed Green Peppers

Reviewed: Jul. 12, 2010
This recipe was very tasty, as I love stuffed peppers. The only changes I would make would be to add more sauce and not cook for a full 45 min., I felt it was too dry. I also did not blanch the peppers first and they came great! I would make again.

Artichoke Pie

Reviewed: May 8, 2010
This pie was good. I did read reviews and put a layer of fresh tomatoe....taste was good. I also put more articoke and used less of the mozzerella cheese, instead of 8 oz., I used about 4 oz. and it was fine.

Pasta with Asparagus

Reviewed: May 7, 2010
Very good! This dish was light and flavorful and also good for you. I did use more chicken broth (almost 1 cup) and I omitted the mushrooms since I do not like them. Also used whole grain angel hair so I felt dish was extremely healthy! I also cooked the asparagus longer then recipe called for. I will make this dish again.....very good use of asparagus since I usually just bake them.

Zucchini and Potato Bake

Reviewed: Apr. 6, 2010
I found the flavor of this dish very good....I did however, make some adjustments from reading other reviews. I added parm. cheese to the breadcrumbs and I also added diced tomatoes...which I feel made the dish. I will make again, but I think I will add more oil, dish tended to be a bit dry.
