This was delish. I used it to make soft tacos.

Absolute Mexican Cornbread

This recipe makes a lot of servings. Tasty, but you'd need a lot of people to eat it while it's still fresh.

Chicken Tikka Masala

Reviewed: Feb. 16, 2011
Good recipe except for the 7 teaspoons of salt which must be a typo because no one in their right mind would use that much salt. I used 1 teaspoon in total, and it was fine.

Pork Tenderloin with Dijon Marsala Sauce

Reviewed: Dec. 27, 2010
Made with chicken. Very good but it takes a long time to reduce the sauce. Perhaps using less cream would work better.

Chicken Marsala

Just okay. Needed salt. The oregano was not noticeable at all.

Chocolate Mousse Cake IV

Reviewed: Nov. 23, 2010
Tastes good, but the pudding mix left the filling with an unappealing gritty appearance. Any suggestions for what could be used instead of the pudding?

Atomic Canuck Chili

Reviewed: Aug. 30, 2010
Not bad, but I thought it needed more seasoning. I left the carrots out because they just don't belong in chili, in my opinion.

White Chocolate Raspberry Cheesecake

Reviewed: Jun. 6, 2010
Very decadent. I used a bit more white chocolate than the recipe called for (maybe 1/2 cup extra) because I wanted to use up what I had. I think doubling the sauce is a good idea and speading it more through the middle of the pan would have created more swirls. The water bath is essential for even baking and to prevent cracks.

Soft Oatmeal Cookies

Reviewed: May 2, 2010
I added 1 cup of dried cranberries, 1 cup of white chocholate chips and 3/4 cup of chopped toasted almonds. I did flatten the dough a bit before baking at 350 for 9-10 minutes. Made almost 6 dozen cookies. Scrumptious!

Butter Chickpea Curry

Reviewed: Apr. 18, 2010
I substituted 2 large sweet potatoes for the 4 potatoes and doubled the amount of chickpeas and cream. Also added 3 fresh tomatoes and 1 tsp of hot red pepper flakes.

Emily's Pickled Eggs

Reviewed: Apr. 11, 2010
These eggs were ready to eat within hours. I would exclude the peppercorns next time because they left strange little brown spots on the eggs.

Peach-Basil Sangria

Reviewed: Apr. 10, 2010
I reduced the peach nectar to 2 cups and omitted the sugar the second time I made this because it was too sweet for my taste. The basil does seem odd, but it adds an interesting quality. I used my lemon reamer to bash the basil around in the pot, which worked better than the back of a spoon. I floated slices of lemon in the pitcher for a pretty presentation. Overall, this recipe was a hit!
