Great memories of My Grandmother, Mother & Several Aunts getting together around the holidays to cook Pasteles, w/ Salsa Music in the backround, everyone talking over eachother and lots of finger tasting!
My cooking triumphs
My second attempt a few weeks ago to cook Arroz con Gandules was almost a complete success....lol...the flavor was great just need adjustment to the texture, but it was near perfect! I'll try again soon :)

Carrot Rice
Family Loved It! I did make a few omissions and substitutes according to availabilty however....I omitted the Ginger & Peanuts. I substituted the Basmati Rice with Parboiled Long Grain and the Cayenne Pepper for Tellicherry Pepper (ground)

Perfect Pineapple Orange Chicken
I used Skinless, Boneless Breast Halves, (which shortened cooking time) 3/4 Pineapple Juice to 1/4 Orange and Lightly Seasoned one side of the chicken w/ Adobo (salt & pepper on both sides) I also added the pineapple slices during the last 1/3 hour of cooking..Family all agreed, the Flavor was really good, but the breast although tender was a lil bit dry.....whole chicken like the recipe calls for is probably best

Best Moist Chocolate Cake
True to Description..."yummy on it's own or w/ frosting"... My Teen followed the recipe but needed to substitute the cocoa in it's absence she used 3x's the amount of Nestle Nesquick (it was still excellent)!
