Bread Machine Rolls

I decided on the Wednesday before Thanksgiving that I wanted to make homemade rolls. This recipe was simple. I made two batches. I am new to bread making, so I was somewhat worried that they would not work. The recipe is fool proof. I rolled the dough in balls and placed it in a disposable round foil cake pan. I covered with glad wrap and put in the refrigerator. I took them out the next morning and let them warm up to room temperature so that they could rise. I brushed them lightly with olive oil and popped them in the oven. They looked like they came off a magazine cover. Great recipe that made it look like I knew what I was doing!!!

Beef Burgundy I

This was wonderful. I made it just as the recipes except my roast was frozen and so I just threw everything in the crock pot and let it cook all day while I was at work. I used Merlot and the flavor was beyond anything we imagined. Everyone loved it and it was so simple.

Chicken Tikka Masala

Irish Soda Bread

Made for the first time today. Very simple. Actually it seemed too simple. I didn't have a 9 inch skillet or baking pan, so I punted and made them in my Pampered Chef stoneware muffin pan. WOW! They were amazing.

Cowboy Skillet Casserole

This was wonderful and easy. I had a bag of ancient sweets (red peppers) that I bought at Sams. I was going to make stuffed peppers. Unfortunately or fortunately, I over steamed them and looked for a different recipe. I found this one. I only had a can of Bush's Grillin Beans- the Fiesta variety. They already have green and red peppers, so I didn't put any peppers in the meat. I doubled the meat mixture- used taco seasoning instead of the fajita seasoning. I then doubled the corn bread mixture- I added 1/2 a can of corn and then two handfuls of the steamed red peppers. In addition to being delicious, the red peppers made the corn bread look on top look gorgeous. Since I don't have a cast iron skillet, I used a 9 x13 baker. It took a little while longer to cook the corn bread than the recipe indicated. This recipe was good enough that I asked my husband to buy the cast iron skillet....he's considering it! Try it and enjoy

Stuffed Mexican Peppers

This was awesome. I steamed the peppers over the water the rice was boiling while I cooked up the meat, meaning I steamed them a little longer than 3-5 minutes. Also, I did not have any Colby Jack cheese, so I substituted real Mexican Cheese- either queso blanco or queso fresco. I forgot to pour the second can of tomato sauce over the peppers and didn't cover the baking dish with foil- didn't thoroughly read the directions! Used yellow and orange peppers instead of red. They looked beautiful and the flavor of the meat mixture is very complimentary to that of the peppers. Hubby raved- said they were better than the ones his mom used to make and believe me that is saying something.

Cheesy Corn and Rice Casserole

I usually do not make recipes that use a can of soup in the recipe. However, this was fantastic. I cooked a whole chicken and during the last 30 minutes popped this right in. Not only was it easy, it smelled wonderful and looked spectacular. I am a little sorry that I didn't take a photo and post it because it was beautiful to look at. Note, I made two changes, but only because I used what I had on hand. I didn't have any cheddar cheese, so I used Colby Jack. Also, I didn't have garlic powder, I had garlic salt which I used, so I omitted the 1/4 teaspoon of salt. This was a great side dish, but was fancy enough for Thanksgiving dinner. Thanks for the recipe Heather! It's a keeper.
