Marinade for Chicken

WOW!! I am normally NOT a "marinade person," but this was DELICIOUS!! I did make the adjustments recommended by other reviewers...We added honey and minced garlic. Also, we wanted to marinade overnight, so we left out the lemon. We took a chance on leaving the vinegar in, as that can sometimes dry out the meat, too, but it didn't at all! Everyone raved about it and after years of resistance, I am now a fan of marinade!! At least this one! :-)

Chef John's Baked Eggplant Sandwiches

These are absolutely delicious and the possibilities are endless! We happen to be gluten free/dairy free, along with a few other allergens, so we had to miss out on the best parts of this recipe and it was STILL fabulous!! Love it! We were surprised at how nice and crisp the eggplant was and how perfectly it worked as "sandwich bread." This is a terrific Paleo recipe when made with Almond Flour (as we did).

The Best Chicken Fried Steak

Our family is Gluten Free and it has been YEARS since I've had Chicken Fried Steak. I decided to try this recipe with Arrowhead Mills GF Flour mix and OH MY WORD it was PERFECT!!! DELICIOUS! Unfortunately, I also cannot eat potatoes, but I will agree with other reviewers that the gravy NEEDS: garlic, onion powder, and Tabasco. With those additions, the whole Chicken Fried Steak experience with this recipe is PHENOMENAL!! Even my daughter who hates meat asked for seconds!

Bacon for the Family or a Crowd

I actually thought my husband must have posted this This is EXACTLY how we have made bacon for 20 yrs! It is PERFECT and SO easy! The other step that should have been added is the clean up...if you have lined the pan thoroughly, the greatest part of this method is that you can let the bacon grease solidify and simply remove the foil & discard! (We wash our cookie sheet, too, but it isn't covered in bacon fat!)

Spanish Potato Omelet

I was raised in Spain and this is definitely a simple and delicious recipe that is just like "home" for me. As other reviewers have mentioned, they do not use tomatoes or green onions with a potato omelet in Spain! Also, we lived in Southern Andalucia, which might be different, but we always cubed our potatoes and fried them until tender (not crispy). As other reviewers have noted, the traditional step is to then mix the eggs, onions & potatoes in a bowl together, letting them sit for a few minutes before cooking the omelet. This is an extremely simple and completely delicious recipe! All my American friends like to dip their bites of potato omelet in KETCHUP when they eat it...whatever works! :-)
