Quick and Easy Chicken and Tomato Pasta

Reviewed: Mar. 5, 2010
I used one package of angel hair pasta, with a 10oz can of chicken, bell peppers, and 1 jar of your favorite pasta sauce. Very easy to make and very cheap!

Cajun Chicken Pasta

Reviewed: May 18, 2010
I though this recipe was only okay, although my boyfriend really liked it. I added flour to thicken the sauce and used half and half instead of heavy cream. I also added more cayenne pepper to spice it up a bit.

Chicken Pasta II

Reviewed: Sep. 11, 2010
This dish was very good and had a lot of flavor. I did make a few changes: I used 3 strips of bacon, instead of white wine I used chicken broth and 14.5oz package of thin spaghetti. It had tons of flavor and everyone loved it!

Kitchen Sink Cookies

Reviewed: Sep. 11, 2010
These cookies were very good. I do agree with some of the other reviews that they were a bit dry, so next time I would add less rolled oats. I also added 1 package of mixed semi-sweet chocolate and peanut butter baking chips. Everyone that tried them really liked the cookies!

Pumpkin Ginger Cupcakes

Reviewed: Dec. 1, 2011
These cupcakes are so good! I had doubts because the batter was a lot thicker than other cake batters, but they turned out so moist. These cupcakes are so moist and delicious! They're good with or without the frosting.

Cream Cheese Frosting II

Reviewed: Dec. 1, 2011
I cut the recipe in half because it makes a lot more frosting than I like but I forgot to cup the butter in half. So I used 1 stick of butter and 1 stick of cream cheese, but the frosting still turned out really good. It wasn't extremely heavy in the taste of cream cheese which I know some people don't like.

Awesome Slow Cooker Pot Roast

Reviewed: Dec. 1, 2011
This recipe is so easy and extremely good. The meat is so tender and moist, not dry at all. There was a lot of sauce so I spooned it over the meat when I served it with rice, delicious!

Panna Cotta

Reviewed: Dec. 1, 2011
I adjusted the recipe so that I did not have to buy excess heavy cream. I made the servings to 10 and added 4 cups of heavy cream. It was a bit tricky with the gelatin but I eyeballed the 3/4 of the second package and everything turned out great! All the panna cotta was gone in just a couple days!

Mama's Asian Chicken and Rice

Reviewed: May 20, 2012
Wonderful dish!!!! I saw this recipe and how easy it was so I decided to try it out and it was amazing! It had so much flavor and I had all the ingredients in my kitchen already! I added more red pepper flakes for more kick. I actually made it with precooked chicken and it was even easier. I will definitely make this dish again!

Best Chocolate Chip Cookies

Reviewed: Nov. 9, 2012
I made the cookies exactly as specified but I didn't think there was anything special about them they were just regular chocolate chip cookies like I have made many times before.

Baked Slow Cooker Chicken

Reviewed: Nov. 9, 2012
I made this recipe but instead of the foil I put potatoes, carrots and onions. I used a 4.5lb chicken. I should have removed the skin because it dripped off a lot of fat. I put butter combined with garlic, salt and parsley all over the chicken. Even though I added half a cup of white wine some parts were a bit dry, but it was great for a chicken pot pie, so no loss here.

Chicken Enchiladas II

Reviewed: Nov. 9, 2012
These were really good!!! I used a left over slow cooker chicken and instead of regular flour tortillas I used whole wheat tortillas. I also used a large can of cream of mushroom and I used more than suggested for the filling. It turned out great. It was very heavy, so maybe next time I might use enchilada sauce to top it off.

Easy Tilapia with Wine and Tomatoes

Reviewed: Nov. 9, 2012
This recipe was super easy and so tasteful. I followed the recipe exactly. I took all the sauce, put it in a pan and reduced it, it went great to put on top of the fish after. Great, healthy, flavorful recipe!

Libby's® Pumpkin Roll with Cream Cheese Filling

Reviewed: Nov. 9, 2012
I make this pumpkin roll every year for thanksgiving and everyone loves it, it's a staple for thanksgiving! I am not a huge fan of anything pumpkin but this I really like a lot! The cream cheese frosting is a bit sweet but you could easily reduce the sugar content and it's still just as good!
