Polynesian Coleslaw

Excellent flavors...exotic combination! That being said I modified it a little. I doubled the hot sauce, used reduced sodium soy sauce, only used one red bell pepper and 5 cups vs 8 cups of shredded cabbage. Delightful :-) I'll definitely make this one again!

Marinade for Chicken

Easy to assemble...accessible ingredients...it doesn't get much better than that! I only used 1/2 cup of oil and still had enough marinade for over a pound of chicken tenders. I love the caramel glaze you get at the end of cooking time. Good flavor and SO MUCH BETTER than ANYTHING you can buy premade at the store!

Tater Tot Casserole I

This is one of the easiest, and most delicious breakfast casserole recipes I've ever used! I used Tennessee Pride hot breakfast sausage and didn't even have to add any more seasonings to it! While frying the sausage, I also added 1 cup diced onion. You can add or subtract things from the main recipe to make it as simple or complex as you want. I just can't say enough about this one...I'll be making it a LOT!

Carrot Cake XI

I made this cake last night and it was exceptionally easy! It turned out moist and tasty...even to my guy who is not a carrot cake fan! I altered the recipe slightly: 1) I ran out of oil so I had to use a little shortening to make the amount of oil required. 2) I didn't have any chopped walnuts so I added 3/4 cup raisins instead - it was a good choice! I will definitely make this one again. When I do, I will also add a bit more spice. Only 2 teaspoons of ground cinnamon was simply not enough for my taste...I'm thinking some nutmeg, allspice or something along those lines. And as far as the cream cheese frosting, I found a recipe here on AllRecipes.com (included in another carrot cake recipe I found :) and it was the cream cheese frosting recipe I've been looking for since I started cooking! It was quick, easy and delicious and the recipe makes quite a bit extra to be used on other baked goods.

Fruitcake Cookies

I made several batches last year at Christmas and have been asked to make more this year! They are incredibly easy to make and more delicious than I ever expected a cookie with the word "Fruitcake" in the name!

Easy Stovetop Peach Cobbler

I prepared this recipe over a campfire in April 2008, and it was a HUGE hit! It is soooo easy! And I believe the charm of cooking it over an open flame adds to the flavor enhancement!

Banana Banana Bread

This recipe has got to be one of the best banana bread recipes I've ever tried. The resulting bread was particularly moist, and I liked the fact that it calls for more banana than most of the banana breads I've made! If I would've had some chopped pecans or walnuts to add, it would have been simply delightful!

Baked Spaghetti

This was a wonderful recipe! There was SO much food to begin with, it would not all fit in a 13x9x2 pan! I had to separate it out into two! I will DEFINITELY make this again...for a pitch-in or family gathering or something. It is very simple and very tasty!

Apple Butter Spice Cake
