Quinoa Salad with Dried Fruit and Nuts

I enjoyed this, but had to play with a bit before I felt the "wow" factor. Doubled the lemon and sesame and used chili oil rather than cayenne powder. With a dash of curry this was great with cashews and diced dried apricots. This is one of those recipes that offers a a wonderful "base" for whatever fruits, proteins or herbs you are in the mood for.

Amazing Italian Lemon Butter Chicken

Okay...amazing. One thing, I break sauces like some people break dishes. So my secret is to make roux to bind my sauce and then add the ingredients. A little thicker sauce, but definitely will not break. Sun dried tomatoes are a nice addition and if you want to cut the carbs and up the protein, this recipe is wonderful with quinoa instead of pasta!!!

Bloody Mary Chicken

Just didn't have the intensity of flavor I was hoping for. Followed recipe as directed. Next time will let chicken marinate overnight and perhaps add some balsamic vinegar to help break down the proteins as they cook. I love the concept too much not to try try again.

Turkey and Quinoa Meatloaf

Delicious! I agree the secret is to bake in free form loafs so the meat doesn't swim in its excreted juices. Allows it to get a nice crisp crust and helps it hold together well for slicing. I made two types: the traditional and an Italian version with herb de province and parm. Great for sandwiches the next day!

Sopapilla Cheesecake Pie

I hate this recipe...........because it is so easy! I love to cook, 3-4 hour recipes are a joy, but this is always such a darn hit I swallow my culinary pride and buy the Pillsbury dough. Secret to this is to chill thoroughly before serving. Also I double the cream cheese and add an egg for stability. For the holidays try mixing in some pumpkin pie filling or swirl with the preserve of your choice. you, Pillsbury for being so easy!!

Mini Frittatas with Quinoa

Good, not great. I made the recipe as is, and they felt a little dry and none-to-special. Next time, a little less quinoa and a few tablespoons of cream cheese should do the trick. I like that the recipe lends itself to tweaks. I also think this would be amazing with a nice hollandaise sauce or a ber blanc of some sort.

Irish Soda Bread and Whiskey Butter

This was fast, easy and flavorful. If you have a round casserole dish, it makes a more traditional presentation. I also like to soak the raisins in whiskey and sugar before adding them to the dough for about an hour.

Mouth-Watering Stuffed Mushrooms

Made these for Christmas. I accidently purchased baby bella mushrooms, but forged ahead anyway. Went over like gangbusters! Have done different variations: adding Italian sausage, trading out cream cheese for mild herbed goat cheese. Always a hit! Thank you.

B'stilla

This was good but not as close to a true B'stilla as I would like. I poached chicken thighs and breast in boullion with some ras el hanout and garlic w/ onions. Remove chicken and let cool, then shred. Mix eggs and pour into hot boullion like a slurry then strain. Mix with chicken, put in pastry. Also some ground almonds for texture is nice.
