Shrimp Chowder
Astonishingly delicious! And very straightforward preparation. I did use larger frozen shrimp (16-22 per 1 lb. bag). The chowder is visually appealing, as well. I suppose because it is not a roux-based chowder - thickening coming from the cream cheese - the surface remained shiny without turning pasty. Just lovely!

Portobello Mushroom Lentil Soup
This is now on my Favorite Lentil Soup Recipes list! Yum! I did substitute some ingredients: red for green bell pepper; 1 can Rotel chopped tomatoes with juice, for tomato paste; vegetable for chicken broth; and red for brown lentils. The portobellos give the soup weightiness, while the sherry gives it a lovely cold-weather sophistication. Oh my!

Lemon Garlic Tilapia
My picky-eaters-all family truly enjoyed this dish. In fact, the fillets disappeared before pictures could be taken.
