Don't use a great tasting steak like a rib eye - use sirloin where the protein needs to be broken down.

Mahi Mahi with Coconut Rice and Mango Salsa

Southern Baked Yellow Squash

I added a little (3 slices) of premade (real) bacon crumbles to the top for a little extra flavor and crunchiness. Very good and will make again. Goes good with slow cooker pork butt.

Potato and Chorizo Mini Quiches

Mine stuck to the pan :( maybe because I used olive oil pan spray. I will try again using baking/cooking spray. Will also only add cheese to the top and add some green onions inside the mix.

Eggplant with Garlic Sauce

I used regular eggplant, through in some chicken,chicken stock, fish/oyster/hoisin sauces, 3 cloves of minced garlic, brown sugar and served over jasmine rice. Will make again but will try substituting Splenda for the brown sugar.

Watermelon Vodka Slush

A little too sweet for me. I used watermelon vodka and very sweet watermelon. Next time I would only use simple sugar or a sweetener of any kind if the watermelon was not sweet. I plan to make this again throughout the summer.

Grilled Chicken Wings with Sweet Red Chili and Peach Glaze

I used sugar free apricot preserves and added minced green onion, minced garlic, and grated ginger root. Then I grilled the wings a bit without sauce then tossed them in a bit of sauce and grilled a little more. When cooked I tossed the wings again with the reserved sauce. These were so good I ate them before taking a photo :)~

Absolutely Amazing Ahi

Avocados were too expensive so I used some chopped frozen mango I saved when they fell of the tree in season. Instead of adding wasabi as some suggested I used about a tablespoon of Sriracha chili sauce and a chopped handful of cilantro. Also flash grilled the yellowfin tuna steak about 30 seconds on each side to get a grill mark and taste before cutting it into bite sized pieces. Served the tuna mixture over a bed of soft leafed red lettuce, toasted black and white sesame seeds along side the sweat and spicy green bean recipe. The flavors had a refreshing summer appeal but I would eat it anytime.

Chili Relleno Casserole

Really easy. I used 2 roasted poblanos (skin off) instead of canned green chilis, 2 chorizo sausages (oil drained), 3 eggs for 4 servings, and finely sliced green onions. Next time I will spray the pan with non-stick spray.

Tomato-Rich Fish Stew

Another delicious and easy way to eat fish. I used a mixture of Grouper, Spanish Mackerel, can of chopped tomatoes, sherry and didn't use water on the sun-dried tomatoes. All sauteed in pot and fish went in last.
