The past two years I haven't been working a formal 8-5 job so cooking has taken over. Food is love in my house. I have always enjoyed cooking but now I am obsessed with new trends, challenging myself, and mastering the simple.
My favorite things to cook
Lettuce cups with ground chicken and spicy peanut noodles my sons favorite ;-) A good fillet, Scallops, I like it all!
My cooking triumphs
Eight pound fillet of Beef Wellington. I watched Gordon Ramsey Wellington 30 times on you tube that day.
My cooking tragedies
More than one ;-( I pulled a pan out of the oven filled with water and with 12 crème Brules dishes too quickly and water covered what would have been tasty treats. I made a butternut squash cannelloni and after it was in the oven for twenty minutes I realized I forgot to add the ricotta cheese to the filling mixture.

Herb Turkey Rub
Fabulous! I started with the Out of this World. Turkey Brine 24 hours. Then used the rub. I placed under skin and made 4 injections. I did not have white so I did the regular with a 1 to 4 ration of white wine. Also I used half the olive oil and replaced with melted butter. Then I wrapped by bird in bacon. I butterflied one bird and placed it on the grill with a piece of oak via indirect heat while the other bird roasted in the stove. Both amazing!!!

Out of this World Turkey Brine
Fabulous! After 24 hours I also used the Herb Turkey Rub recipe and wrapped by bird in bacon. I butterflied one bird a placed it on the grill with a piece of oak via indirect heat while the other bird roasted in the stove. Both amazing!!!

Butternut Squash Bake
Tasty, next time I would of add a tad bit more cheese. I am blue cheese lover. My son, Quinn who is 11; is not, I will try the feta suggestion. Will definitely make it again!
