Mediterranean Chicken Marinade

I used bottled lemon juice because I didn't have fresh lemons. The recipe calls for juice from a fresh lemon so if you use bottled lemon juice, cut back by at least half. My fish ended up very, very lemony but I did not decrease the amount of bottled lemon juice from the original amount called for in the recipe. Even so, I think the recipe still needs something else to offset the lemon flavor. Next time I think I will add black pepper or ginger to add another dimension to the flavor. Thanks for sharing.

Garlic Mashed Potatoes Secret Recipe

Loved it! My butter wasn't room temp and it still seemed to turn out fine. I cut it into one inch blocks and added it to the warm pan then put the warm potatoes on top to help melt the butter. Also, I didn't have Romano so I used a shredded Italian cheese blend from a bag. Delicious! I will be making this again. Thanks!

Lawn Mower Salad

This is a great "mix and match" recipe. Customize it to your liking by adding different nuts, craisins, raisins, shredded carrot, etc. I used aged balsamic vinegar and extra virgin olive oil. Might use less sugar next time to allow for a bit more sourness to the dish but still delicious.

London Broil for the Slow Cooker

This recipe is very good and very easy! We will make again for sure. The meat comes out very tender. My only criticism is that there wasn’t enough sauce. Next time I will add more soup and more water so that there is more sauce. Kinda tastes like beef stroganoff. I served it over egg noodles. Yummy!

Lettuce-Free Salad

Hmmm, there is a reason you should eat this on lettuce, because it needs more texture. Maybe diced carrots, celery, or something crunchy...otherwise all of the ingredients are very similar - soft. Also, I would recommend cutting back on the feta; the flavor overpowers the dill and dressing. I think with some adjustments this could be good, but as-is I give it two stars.

Greek Hamburgers

These burgers have GREAT Greek flavor to them. I used store bought tzatziki sauce. I didn't have any goat cheese, so I only used feta. Also, I added about a tbsp. of the tzatziki sauce to the beef and an egg to bind. In retrospect, I should have added some breadcrumbs. My burgers were on the softer side, so don't expect a firm texture like you get with regular burgers. Hubby loved the flavor, but would have liked a more firm texture. To replicate gyro style, we added a sliced tomato to the bun, beef patty on top, topped with a bit of tzatziki sauce. We don't like onions, but for those that do, an onion slice added to the burger would probably be good too. Yummy change of pace from regular burgers.

Easy Spinach and Arugula Chicken

OMG...this is one of the easiest and quickest-prep dishes I have ever made! Love, love, loved it! I used all spinach because I didn't have any arugula. Before stuffing the chicken, I drizzled a bit of EVOO on the spinach, added garlic and Parmesan to it, then mixed well to coat the spinach. I lightly sprinkled the stuffed breast with seasoned salt and black pepper. The chicken was moist, the skin was crisp, and my husband loved it! He thought it belonged in a restaurant. It was so good and EASY! We will be making this again and again.

Fruity Chili

Excellent! If you're looking for something sweet and spicy, this is it! I used one small white onion in place of the red onion because that's all I had and I used two banana peppers from the garden instead of one. My husband and I loved it. I may try brown sugar in place of the white sugar only because I personally would have liked a little more sweetness, but my husband said it was perfect just the way it was. Will definitely keep this one. Thanks!

Melt-In-Your-Mouth Meat Loaf

This is very good. I omitted the mushrooms because I didn’t have any but will make it again with mushrooms. I added minced garlic and doubled the sauce per the other reviews. Definitely double the sauce. Hubby liked it so will make it again. I was leery about cooking meatloaf in a crock pot but it works! Very moist; not burnt. Only thing is the grease collects underneath the meat so I would recommend taking the meatloaf out of the crock before layering the sauce on. Finish in the oven for 15 minutes to heat the sauce through. Not the best I’ve ever had but pretty darn good!

Easy Lemon and Garlic Broccoli

I cut the recipe in half and used frozen broccoli and minced garlic from a jar. Good flavor; more lemony than garlicky. Tasted good but the browning of the broccoli was a bit of a turn off. I haven’t seen brown broccoli but the flavor was there. I will try steaming with an actual steamer next time and just add the lemon juice during the second step. I added grated parmesan at the end. I rated 4 stars only because of the brown broccoli being a bit off-putting.

Colorful Frittata

This recipe was good but not great. I really like Dijon mustard but this seemed to have a very strong Dijon flavor to it. Also, for two people this quantity lasted for a few days in our house. It was better the morning it was made rather than after the fact. Not sure if it's because it was fresh and hot on the first day or because it was reheated in the microwave, but it didn't seem to taste as good as the first day. We'll probably make this again but we'll reduce the amount of Dijon mustard and scale the recipe back for two people. Thanks for sharing.

Pork Chop Dinner

We enjoyed this recipe. For two people I used the recipe for three pork chops but didn't skimp on the sauce so the chops wouldn't be dry. Also, per another reviewers suggestion, I added one can of Rotel diced tomatoes with peppers and one jar of marinated artichoke hearts with the juice. Very good!

Easy Vodka Sauce

I added six cloves of minced garlic along with the onion in the butter then added 1/2 tsp. of crushed red pepper flakes along with the vodka. Added to crushed tomatoes: 2 Tbsp. Basil, 1/2 tsp. Oregano, 2 tsp. Parsley, 1 tsp. salt, & 4 tsp. Sugar. I also added 1/2 cup of grated parmesan and pureed with stick blender. So good!

Loosemeat Sandwiches III

I gave this recipe four stars only because I made a few changes based on other reviews. I used chicken stock instead of water and added Worcestershire sauce. We don’t like raw onions so I added dried chopped onion to the meat. The sandwiches were good. Hubby really liked it so it’s definitely a keeper.

Creamed Cucumbers

I rated this a 3 star recipe because the ratio of dressing to the cucumbers is way off. There is just too much sauce. It's almost a soup. I even cut the sauce in half based on other reviews and it was still too much. Also, it was a tad too sweet for my taste. Next time I’ll cut back more on the liquid and on the sugar. I took another reviewers suggestion of putting the cucumbers in a salt brine overnight to draw out some moisture. They absorbed some of the salt from the brine so I didn’t add the salt that the recipe called for. I made a few other changes as well. I used milk instead of condensed milk and garlic pepper salt rather than the pepper and garlic salt listed in the recipe. Like another reviewer, we don’t like onions so I used dried chopped onion instead of the green onions and onion salt. My hubby’s a picky eater and he liked it so I’ll make again but with less sugar and less sauce.

Chicken Breasts Pierre

I really liked it; it is very good. I cut the recipe in half for two people. I didn't have any celery seed so instead of using 1/2 teaspoon salt and a 1/4 teaspoon celery seed, I used 1/2 teaspoon celery salt. Also because I love tomatoes, I used one full 14.5 ounce can of diced tomatoes with the liquid in lieu of the 1/2 can and 1/2 cup of water. I wish I had more sauce though so maybe I'll add water or chicken stock next time. My husband LOVED it and that is quite a feat considering we have opposite tastes. That's why I'm giving it five stars. We'll definitely make again. Way to go!

Homemade Tomato Basil Pasta Sauce

Yummy! So easy and so much better than store bought. I didn’t have fresh tomatoes so I used two cans of diced tomatoes per another suggestion. I also added oregano, Italian seasoning, additional garlic, and a few dashes of cayenne for a bit of kick. Blended it with the stick blender to smooth it out and voilà…delicious!
