Maple-Garlic Marinated Pork Tenderloin

Reviewed: Apr. 19, 2011
This was ok.... I had high hopes for this one but it was kind of a strange, bland taste. Perhaps I didn't let it marinate long enough (although it was in the marinade all day at work).

Best Burger Sauce

Reviewed: Apr. 19, 2011
This was absolutely awesome! Just FYI though, the recipe makes A LOT! I cut it in half and it was still too much. I didn't change a thing and it was gobbled up by my family. Everyone put it on their burgers, of course. I had also made oven fries and we found it was a great dip for the fries! Not so healthy, but great for a once-in-awhile BBQ or fun dinner....

Carol's Arroz Con Pollo

Reviewed: Apr. 19, 2011
This was delicious and so easy!! I only made a few revisions: I added about 1/8th tsp of cumin and turmric. I also had to add quite a bit more salt than the 1/2 tsp the recipe called for. Alerted by other's reviews that the recipe was bland I made sure to taste it all the way through and found myself adding more salt almost ever time. I would estimate I added about 1 1/2 tsp total. Which is not a lot for 4 people but next time I'll try to figure out how to add less salt. I'm thinking of using scallions next time to add more flavor.

Best Black Beans

Reviewed: Apr. 19, 2011
This was fantastic! Like everyone else, I made some revisions: Cut down on the onion (half a small onion, minced very fine) and doubled the garlic. Sauteed the onion and garlic in olive oil until soft and browned. Drained the beans and added them to the pot with about 3/4 can of chicken broth. Added the cayenne pepper and 1/4 tsp of cumin. Salted and peppered. Simmered for about 20 minutes or until most of the liquid has evaporated. Dress with about 1 tsp of lime juice. Its delicious!!! I also threw in about 1/2 cup of roasted corn from Trader Joe's towards the end which gave it a nice textural interest. I omitted the cilantro completely because I'm not a fan of cilantro but added the cumin for more flavor and it turned out amazing! Served with steak fajitas.

Ricotta Fettuccine Alfredo with Broccoli

Reviewed: Jan. 24, 2011
This was delicious! Almost a perfect substitute for the real fettuccini alfredo! I didn't make any changes to the recipe but if I were to do it again I may add just a tad more milk (or less ricotta/parmesean) since the sauce was quite thick...almost pasty. The taste was excellent and both me and my healthy food hating husband loved it!

Caramelized Onion and Gorgonzola Pizza

Reviewed: Jan. 18, 2011
This recipe was delicious with a few modifications: I used about half the gorgonzola cheese (and even that was a bit strong but I guess it depends on your taste) and like some other reviewers suggested combined the gorgonzola with a mix of shredded cheddar and mozzarella. It made it much more delicious and didn't taste like it had cheddar or mozz in it at all - just created a nice background for the gorgonzola. I used store bought whole wheat pizza dough from Trader Joe's and seasoned it with salt, pepper and olive oil before adding the toppings. I used a mandolin to get paper thin, almost shredded, onion slices. This made it more like an onion jam at the bottom. Overall this was delicious - the leftovers made a perfect lunch the next day when heated up in the toaster oven. Would also like to try this as tartlets, perhaps on puff pastry shells for an appetizer.

Rich Chocolate Frosting

Reviewed: Feb. 1, 2010
Really great and very simple recipe for frosting. Perfect light texture (almost like a whipped frosting) and wonderful flavor. I made 12 servings instead of 32 and it was enough to cover an 8x8 pan of brownies with about a cup leftover.
