I used this recipe last night for a picnic. I modified by taking out the water and walnuts and doubling the banana. I also used frozen raspberries. To my surprise, I did not have any loaf pans in the house, so I used a 8 inch square cake pan and six tiny heart shaped muffin cups (I had extra batter, due to the extra banana). The muffins only took about 10-15 min, but the cake took exactly 55 minutes in the square pan. Everyone loved the cake. It was perfectly moist. Would also be nice with a light sugar glaze as a cake recipe. Next time I might up the raspberry content. A great recipe.
Tonight I made this recipe with the following alterations
1 3/4 cup brown rice flour
3/4 cup sugar
1 tsp baking soda
1 cup mashed banana
1/2 cup applesauce
1.25 cup of blackberries
Turned out great.
