Soft Oatmeal Cookies

The best oatmeal cookie recipe I've tried. I made a few changes. I used regular oats and added 1 tsp of nutmeg. I split the batter in half and added 3/4 cup of raisins to one half of the batter and dark chocolate chips with dried cranberries to the other half. Both types of cookies turned out fabulous.

Best Chocolate Chip Cookies

I used dark chocolate chips and took out the walnuts this time, because I didn't have any. Good recipe and I wanted to eat the dough (which I never do). I made 15 cookies and left the rest of the dough in the fridge for my party in a couple days. Also, I left the cookies in the oven for 12 minutes.

Light Chocolate Chip Cookies

I think this may be the first time in years that I followed a recipe almost exactly. Considering these cookies are a lighter option, they are quite good. Not the best I've ever made, but pretty darn good.

Raspberry Banana Bread

I used this recipe last night for a picnic. I modified by taking out the water and walnuts and doubling the banana. I also used frozen raspberries. To my surprise, I did not have any loaf pans in the house, so I used a 8 inch square cake pan and six tiny heart shaped muffin cups (I had extra batter, due to the extra banana). The muffins only took about 10-15 min, but the cake took exactly 55 minutes in the square pan. Everyone loved the cake. It was perfectly moist. Would also be nice with a light sugar glaze as a cake recipe. Next time I might up the raspberry content. A great recipe. 2012-09-13 Tonight I made this recipe with the following alterations 1 3/4 cup brown rice flour 3/4 cup sugar 1 tsp baking soda 2 eggs 1 cup mashed banana 1/2 cup applesauce 1.25 cup of blackberries Turned out great.
