Cheesy Tuna Melts
Fantastic! I did change a few things. I added onion instead of celery. Also added a dab of red wine vinegar, curry and italian seasoning for flavor (I'm big on seasonings). I didn't have any tomatoes but I will definitely try them next time. And instead of cheddar, I added some shredded gruyere. Lightly buttered the english muffins so they weren't dry. 3 minutes was perfect - NO LONGER! Even my 5 year old loved it!

New Orleans Barbeque Shrimp
This is a very yummy and versatile dish! I was broke and all I had was a half pound off tail off shrimp and some old spaghetti noodles. I found this and figured I'd give it a shot. First since I only had half bag of shrimp I cut the recipe in half. I didn't have garlic powder so I used Adobo, didn't have rosemary, (I just did without), followed the rest of the seasonings. Added the beer (I was out of Worcestershire so I put in soy sauce) and I added 1/4 cup of spicy v8 to make it saucy so I could put it over some noodles.

Bacon and Potato Soup
Delicious! I really did try to follow completely but first I realized I only had 2 potatoes, so I used a can of sliced potatoes also (couldnt even tell). Also I didn't discard the bacon grease I used to to saute onions. Everything else I followed except I omitted celery (gross) and at the end I wanted it thicker so I added a combination of corn starch and water. I also didn't measure the cheese just put a ton in because we love cheesiness. :) Sooo yummy and easy for a quick winter lunch!
