Tater Tot Casserole

OK -- always thought this was a rather gross recipe but hubby grew up on it so I caved. I did half a can of corn, a quarter of a can of each: cheddar cheese soup, cream of mushroom and cream of chicken. Took the BBQ sauce tip and used instead of ketchup and added about a tablespoon of fresh basil just because. Baked and sprinkled with shredded parmesan because that's what I had. It was really good! I baked it in the toaster oven because it is July in MS and I think I don't have to explain---but yes, it was good. Now off to the treadmill!

Classic Goulash

Made last night. This type of recipe just gets better with age. I loaded it up with paprika and used a ground beef, lamb and veal mix. Served with toasted Italian bread to soak up the gravy. Feel free to experiment--regardless of what others have said, there is no wrong way to make this type of dish. And a sprinkle of freshly grated cheese is so comforting!

Banana-Zucchini Bread

I doubled the amt of zucchini and bananas, added pecans and butterscotch morsels plus a dash of pina colada mix, coriander and baked in a bundt pan. Very tasty!

Baked Sweet Potatoes with Ginger and Honey

World's Best Lasagna

Not time-consuming at all! I really enjoy the flavor of fennel so I added more to the ricotta mixture, along with some fresh nutmeg. I eliminated the salt and sugar because I used canned sauce. Fresh herbs, if you have them, are best. The sauce only needs to simmer for about 30 mins. Bon Appetit!
