I love to make soups - especially in the cooler months (which is pretty much Oct. thru April here!) Also love to bake (cookies are my specialty) and try new combinations for creative paninis and sandwiches. (I'd love to have my own soup and panini cafe someday)

Tomato, Basil, and Feta Salad
This is a delicious and refreshing salad. I prepared everything the day before serving and refrigerated. Just before serving, I added the feta cheese. The only changes I made were to add extra feta (about 1/3 cup), use beefsteak tomatoes (seeded) in place of roma, and purple onion in place of the scallions. (I also didn't fully peel my cucumbers, but left some strips of green on them for the added color.) I made these substitutions in order to use what I had on hand. The fresh basil definitely adds the finishing touch to this salad. I would recommend using white balsamic vinegar, if available, to keep the colors of the veggies bright. This is a GREAT recipe and we'll be using it often!

Garlic Alfredo Tilapia
This is a simple yet delicious way to serve Tilapia! I had my dinner ready in about 15 minutes...which is amazing for me! I season my fillets with either Penzey's Northwoods Seasoning or Penzey's Jerk seasoning and while it's baking, I make up a quick home-made Alfredo Sauce with 1/4 cup of butter, some fresh garlic, 1/2 cup of half & half, 3/4 cup good Parmesan (grated) and a little Italian seasoning. (Just saute the garlic in the butter over med/high heat, then add the other ingredients, stirring until blended.) This recipe is definitely a keeper - thanks for a new way to serve up Tilapia!

Grilled Chicken Salad with Seasonal Fruit
This made a delicious and satisfying summer meal. After reading some other reviews, I decided to marinate my chicken in a mixture of white wine vinegar, olive oil, garlic, orange juice, seasoning blend (I used Penzey's Mural of Flavor) and a little honey. The chicken was juicy and tender with a great flavor. I also used raspberry wine vinegar, a little less sugar, and no onion in the dressing. It was such a nice complement to the strawberries, pecans, & chicken! I grilled a few pieces of garlic toast alongside the chicken the last minute or two of grilling and ended up with a wonderful, warm-weather meal! Thanks for the recipe - it's sure to become a "go-to" meal especially in the summer months!
