Uncle Wynn's Bread Machine Rye

Reviewed: Jul. 1, 2012
The crust is a little harder than I prefer, but this bread is great! My bread machine is small, so I halved the recipe and followed other reviews by omitting the cornmeal and instead using bread flour for the cornmeal. I also omitted the wheat gluten. It just finished cooking and I had a little to make sure I liked the taste before planning my lunch tomorrow. So yummy! My husband had a taste, too, and he said it makes him yearn for some Northern European food! Thanks for the great, useful recipe!

Oven Baked Tempeh

Reviewed: Jun. 26, 2012
I love tempeh, but it is really difficult to find it in Tokyo. I finally got my hands on some and decided to try this recipe. Like another reviewer, I substituted one onion for the leek and shallots. I also used cayenne pepper instead of red pepper flakes and Japanese eggplant instead of zucchini. I omitted the bell pepper. I used soy sauce instead of tamari and vegetable broth instead of sherry. Also, I followed another reviewer and soaked the crumbled tempeh in soy sauce, olive oil, cumin, garlic powder, and chili powder before cooking and only sauteed the veggies for about a minute. Still, this recipe was pretty great! Will definitely make again.

Easy Vodka Sauce

Reviewed: May 10, 2012
We're getting ready to move, so I need to use up the stuff in the kitchen. I found this recipe and I had all the ingredients except cream, so on that note it was perfect. Following other reviews, I added oregano, salt, sugar, minced garlic, and thyme. I think that sugar and salt are definitely crucial to the recipe, but probably could have left out the oregano and thyme. Garlic is optional, based on your personal preference. The recipe is super creamy, and a bit on the heavy side. Still, quite tasty and definitely an interesting take on pasta sauce.

Meatiest Vegetarian Chili From Your Slow Cooker

Reviewed: Jan. 5, 2012
Great recipe! I don't like bell peppers, so I left them out and added corn. Also, I couldn't find black beans, so I used kidney beans and cannelloni beans instead. I decided to make this around 4 pm, so I opted to cook on the stove, and it still came out absolutely amazing! Will make many more times!

Southern Turnip Supreme

Reviewed: Nov. 22, 2011
I wanted something different from boiled turnips, so I tried this recipe and how glad I am! Only changes I made were to add some cold cooked leftover potatoes, put into a casserole dish, top with more cheese, and bake 20 minutes at 200 C. My husband thought I had learned how to make a really delicious gratin and was surprised that it wasn't some fancy French white sauce he was tasting!

Tomato-Bread Salad with Basil and Capers

Reviewed: Aug. 15, 2011
I followed the recipe exactly except I didn't use onions (can't stand raw onions), and couldn't find French or Italian bread, so I substituted regular bread. Like several other reviewers, I added 2 small, nearly seedless chopped cucumbers and some chopped mozzarella. This got a major "Wow" from my family! We will definitely be making it more often, and I am hoping to take the leftovers for lunch tomorrow if my husband doesn't sneak downstairs and eat them all tonight!!

Potato and Vegetable Frittata

Reviewed: Jul. 20, 2011
I would give this a 2.5 stars, only. I followed the recipe almost exactly, but noted that others had mentioned that it was a little bland, so I added extra spice (more oregano, some basil, extra salt and pepper, and quite a bit of cayenne). Also, even though I love black olives, they sounded odd in this recipe, so I left them out. Still, the recipe left a lot to be desired. Bland and nothing new. I will cook it again, probably, but I really have to figure out a way to make it taste special.

Olive-Cheese Zucchini Boats

Reviewed: Jun. 29, 2011
Getting the pulp out was a bit difficult for me at first, but I figured out a trick with a spoon, and the rest was so easy! Great taste, and I followed the recipe exactly.

Cheesy Tuna Melts

Reviewed: Jan. 17, 2011
Yummy and so quick! I used fake corned beef (vegetarian option) instead of tuna, and it was a breeze. Only thing I had a problem with is that it was a bit too oily for my tastes... hubby (who ate it with real tuna as recipe says) thought so, too... Less mayo next time for me!

Butter Bean Burgers

Reviewed: Jan. 16, 2011
These burgers were great - easy to make and the best part was that I could freeze and eat the leftovers later! I saw on the reviews that they fall apart easily (or crumble), and that is true, but still delish!
