Mock Lobster

I wasn't expecting this to actually taste like lobster (Maine girl here), but I made it anyway based on the reviews here. The only flavor that carried through was salt. I used low sodium soy sauce and garlic powder rather than garlic salt but it was still gag-worthily salty. My husband and I didn't even bother to melt the butter before we tossed the inedible chicken in the trash. Black Beans and Rice

This was delicious and much lower in fat than any beans and rice recipe I've encountered. The toasted rice added a nice richness to the dish. Based on previous reviews, I did double the cumin and cayenne, and I'll probably add even more next time.

Fresh Asparagus Soup

Chole Saag

I was so excited for this dish based on the positive reviews, but was very disappointed. There was a good amount of heat in the dish (I doubled the red pepper and cumin), but it lacked any other flavors. Even my husband, who will eat anything, declined to touch the leftovers.

Downeast Maine Pumpkin Bread

This recipe is delicious! It has a great pumpkin flavor and nice texture, even with all of the healthy tweaks I made (wheat flour, 1/2 applesauce and 1/2 oil, less sugar). I can't imagine how amazing the original would be. I also threw chocolate chips in a few muffins and will add them to the whole batch next time. P.S. Is pumpkin bread a Maine thing? It's one of my favorite foods, and I grew up on the coast of Maine, but I never realized it was a regional dish.

White Almond Wedding Cake

Delicious! The crumb was very delicate. I tried to make a mini replica of our while almond wedding cake for our anniversary, and this was tastier than the original...and A LOT less expensive :) I sliced the layers horizontally and basted them with amaretto, and then spread raspberry preserves in the middle. Awesome and pretty.

Grilled Pineapple

This was amazing! I squirted in a generous amount of sriracha for the hot sauce, and the result was delicious. Can't wait to make this again and again. I did cut the butter in half to make it more healthy.

This marinade is amazing. Five stars for sure. I docked one star for too long of a cooking time. I prefer a just quick sear on each side.

Shredded Beef Enchiladas

I'm not a beef fan, but even I couldn't resist these. The beef was so tender and flavorful. I used them as a base in a different enchilada recipe, but the beef alone is worth five stars. My meat loving husband also raved about this meal.
