Roasted Vegetables

Loved this dish! Used carrots, red potatoes, butternut squash, red onion, and brussel sprouts. Like another reviewer I put the carrots, potatoes, and squash in for 15 minutes first, then added the onion & sprouts and cooked for another 30 minutes or so. I used dried herbs cause that's what I had, but fresh would have been even better

Charleston Breakfast Casserole

Made this for my husband and visiting family & it was a hit all around! After reading the reviews I used 9 eggs/2.5 cups of milk. Otherwise I followed recipe. I think I could have used at least another 3 eggs, and maybe another 1/2 cup of milk. Maybe at little cajun seasoning too. It was not dry, just a little flat. I think I will try it with sausage and mushrooms next time as well

Black Beans, Corn, and Yellow Rice

I have made this several times to serve with enchilladas, tacos, etc. and everyone always raves about it! Even my husband,who is not a big cumin fan, loves it! I always cook the rice according to the directions on the package, then add the other ingrediants. Delicious, easy & tastes so fresh - what more can you ask for? Making again tonight to serve with crockpot fajitas Thanks tahoegirl!

Chicken Taco Filling

This was sooo easy & very flavorful! I actually used McCormick Chicken Taco seasoning packet (because that's what I had on hand), 8 frozen chicken tenders, and a cup of chicken broth. Cooked on high for 5-6 hours. Shredded the chicken, and made empanadas with it, (using the frozen empanada discs I found in the frozen section of the grocery store), added a little shredded sharp cheese, brushed them with an egg-wash, dusted with a little chili powder, and put them in the oven @ 375* for 20-25 minutes. Everyone went crazy for them! I think I'll use the leftovers for either nachos or tacos tonight. Next time I'll use my large crock-pot, make a double batch & freeze some to have on hand for whatever!

Grilled Garlic Artichokes

These were WONDERFUL!! I have always been intimidated by artichokes, but when they went on sale for $1.00 each, I thought I would give this recipe a try. So glad I did! SOOOO EASY! I steamed them in my steamer, then marinated in the fridge for a couple of hours, & grilled just long enough to warm, and they were a huge hit! Making them again this weekend for our camping trip!

Peanut Butter Pie

Wow! You don't get any easier or any better than this!! Like other reviewers I doubled the peanut butter and halved the whipped topping. I didn't have any peanut butter cups, so I just drizzled a little chocolate & caramel syrup over it. The pie was sooo peanut buttery and held together really well. I will be making this a lot!!

Cadillac Pimento Cheese

WOW! I have never cared for pimento cheese, but my husband loves it. So we decided to make this recipe for our New Years Eve party. We made it 2 days before the party, and I can already see I will have to make more! We mistakenly put in 8oz of cream cheese instead of 4, and used 1 cup of yellow cheddar & 1 cup white cheddar, instead of the cheese food. The consistency & texture were great! Very light, fluffy & spreadable. We may even try using this recipe as a base, and adding bacon! Thank You for such a simple yet wonderful recipe!

Herbed Greek Roasted Potatoes with Feta Cheese

Loved the flavor of these potatoes! I cut the recipe in half, diced the potatoes, then cooked for about 10 minutes in the microwave as others suggested. Poured the liquid over them & put them in a pan on the grill while I cooked my chicken. Just before serving, I added the feta cheese, & stuck under the broiler for a few minutes - turned out great!

Hash Brown Casserole II

Great recipe! Just what I was looking for! Was very easy & everyone loved it. I had a 26 oz bag of hashbrowns, & no corn flakes, but it turned out wonderful just the same. Will definitely be a stable in our house.
