Simple Sloppy Joes

Very good, very easy! Even my picky 5 year old and 3 year old daughters and my super picky husband liked it. I made the recipe exactly as shown and it was great. Next time I'll probably add some diced red or green peppers or possibly some shredded carrot and just a bit less of the brown sugar. Excellent quick dinner recipe!

Whole Wheat Blueberry Pancakes

Very good! My daughter said they felt like a pillow since they are so fluffy. I added some vanilla and used 4 tbls of sugar. Served them with some fresh macerated strawberries and the kids ate them up! I'll be keeping this recipe.

Slow-Cooker Chicken Tortilla Soup

Very good soup! Even my picky eaters loved it. Didn't have time to put it in the crockpot so I just made it on the stove. Only had green enchilada sauce so I used that and added black beans instead of corn. My husband said it was one of the best soups I've made. Definitely a keeper! Instead of the tortilla strips I made cheese quesadillas for everyone.

Very good, even my picky 6 year old loved it, gave it two thumbs up. Instead of bouillion I used beef broth. I also mixed some adobo in the meatballs. I put it all in the crockpot instead of cooking on the stove and the house smelled great all day. Everyone loved it. A winner!

Simple Whole Wheat Bread

Love this recipe! Was able to make 2 loaves of pepperoni bread and 1 loaf of cinnamon swirl bread. Very moist and soft with a chewy texture. Everyone loved it!

Crustless Cranberry Pie

Very good and a different way to use cranberries. My kids liked it but didn't like the nuts even though I tried to crush them finely they still realized that they were there. I substituted white whole wheat flour for the all purpose and 1/4 cup of the butter for unsweetened applesauce. It still turned out great. Definitely a keeper!

Sour Cream Apple Pie Deluxe

The best apple pie recipe ever! Everyone loved it and raved over the taste. I added about 1/2 cup chopped walnuts to the topping as well. Will definitely be in my cooking bag of tricks!

Banana Cranberry Bread

Great recipe! I did make a few changes: 1 cup of sugar only, used nonfat yogurt in place of shortening, used 4 bananas, used 100% white whole wheat flour instead of all purpose, used fat free milk. Came out perfectly moist, the kids raved about it. Will definitely be making this again!

Quick and Easy Brownies

Great recipe! I made a few changes to make it a little bit healthier. Substituted 1/2 cup of the butter with unsweetened applesauce and used white whole wheat flour instead of all purpose. I followed other people's suggestions and reduced the flour to 1 cup. I also added a touch of cinnamon. It was pretty sweet so I think next time I'll reduce the sugar to 1.5 cups and see how it turns out. Very easy recipe and turned out delicious fudgy brownies that my daughter's entire first grade class including her teachers LOVED!

Sicilian Ricotta Cheesecake

Delicious! My husband (who is very picky!) loved it. He said it tasted like a cross between cheesecake and flan. Instead of orange zest I used the zest from 2 small lemons and the juice from 1 small lemon. I also used 5 eggs because I had extra large eggs on hand. Definitely on our list of dessert favorites!

Blueberry Cornmeal Muffins

Very moist with tons of blueberry and corn flavor. The only thing I didn't like was that they tended to get sticky and wet the longer they sat. Regardless, they were delicious! My 4 year old loved them and has asked me to make them again.

Carrot Cake III

Absolutely delicious! My 4 year old asked me to make a carrot cake for Easter. I never made one before so I took a chance on this recipe. A real winner! Everyone loved it! Some changes made: used 3/4 cup of canola oil and 1/2 cup unsweetened applesauce, 1 cup AP flour and 1 cup white whole wheat flour plus added about 1 cup of sweetened flaked coconut. For the frosting I used neufchatel cream cheese for less fat and omitted the pecans. I also added about 1/3 cup of ground flax seed. Next time I'll try using a little more applesauce and a little less oil and all white whole wheat flour. Thanks for such a great recipe! Now I can sneak carrots into my carrot hating 6 year old's muffins ;)

Chewy Chocolate Chip Oatmeal Cookies

Delicious! Used white whole wheat flour instead of all purpose, added a dash of cinnamon, added about 1/4 cup of ground flax, used only 1/2 cup of butter and substituted 1/2 cup unsweetened applesauce for the rest of the butter. Will be making regularly!

Sauteed Apples

Delicious! I didn't peel my apples and it didn't make any difference. I used the leftovers to top my oatmeal the next morning. The family ate them up!
