Gingerbread Men

Reviewed: Jan. 3, 2011
Good recipe to jar up for Christmas gifts! The cookies are mild and more of a cross between a shortbread cookie and a Gingerbread cookie. The kids liked them a lot.

Green Tomato Cake

Reviewed: Jan. 3, 2011
I made this for Christmas with cream cheese icing. I loved it and it was a great way to use up some of my green tomatoes. I was getting tired of baking/frying them. It wasn't much of a hit with everyone else, though. My kids didn't eat it and about half of the adults liked it. I probably won't make it again because I can't eat it all by myself! I may try it with a different icing or incorporate the tomatoes into a bread instead...

Lentil and Green Collard Soup

Everybody liked except for the kids. I added smoked turkey, though. They might like it better with sausage or no meat...

English Flapjack

Reviewed: Mar. 18, 2010
5 stars with a few revisions... Try this for the perfect flapjack: 1 c. butter 1/2 brown sugar 1/2 c. golden syrup 2 1/3 c. quick cook oats (not instant) Follow rest of the recipe as stated, though I usually only need to cook mine for 20 minutes at 350. I also omitted the raisins for a more authentic flapjack. Enjoy!!

Broiled Tilapia Parmesan

Reviewed: Mar. 10, 2010
My most favorite way to eat Tilapia! Very tasty! I added 1/4 tsp paprika & 1/4 tsp garlic powder to mixture. I sprinkled the fillets with Lawry's seasoning salt before broiling for the first time. Served with a side of steamed lemon garlic broccoli & it's a perfect AND healthy meal! Thanks for a great recipe!

Zucchini Egg Bake

Reviewed: Mar. 2, 2010
Man, was this AWESOME!! I used parma, cheddar, & goat cheeses. I also added an extra egg & little more zuchinni. I didn't peel it. Used dried spices (except for the parsley). It was unbelievable! Thanks for the great recipe!

Excellent! Will use more peppers next time. We like it hot here in Tejas! It's good with sour cream as well!
