Mouth-Watering Stuffed Mushrooms

Reviewed: Dec. 28, 2012
This recipe was a major hit at Christmas! They were eaten up within 5 minutes! I added a bit more chayenne pepper (personal taste), green onions instead of onion powder, doubled the garlic and added more cheese. I did make two days prior and that was wonderful to only have to pop into the oven. I will make again, and again, and again...

Hummus III

You definetly need a food processor for this recipe. I added more garlic. I will make again and experiment with roasted red peppers, jalepenos, etc. Good starter recipe.

Chocolate Brittle Surprise

Reviewed: Dec. 16, 2012
This certainly is an addicting, delishous, yummy recipe!! After reading reviews, I decided try both saltines and graham crackers in the same pan. I liked the graham crackers better...but that's a personal taste. Also, I found it a lot easier to crumble the crackers into small size pieces and put that on the pan instead of individual crackers. This way all the cracker pieces were covered with the sugar/butter mix. I was very disappointed that most of the pecans fell off the crackers so on my second batch I added in the cup of pecans to the sugar/butter mix BEFORE pouring over crackers. That worked out wonderful!! Be sure to buy extra of all incredients because you'll definetly want to make a second batch.

Cream of Chicken with Wild Rice Soup

Reviewed: Jan. 15, 2012
GREAT CREAM SOUP! Instead of water used canned chicken broth. Cut up the veggies real little and used one carrot. Also, substitued butter for oil. Oh...I don't care for wild rice so left it out. After I sauted the veggies, I added the wine at that time. I will definetly make this one again. Worth it for sure!

Caldo de Res (Mexican Beef Soup)

Reviewed: Jan. 24, 2011
Wonderful on a cold winters night! I did as suggested and cooked the meat for 2-3 hours. Meat fell off bones! I like it a little spicier so I used a can of Rotel instead of plain tomatoes. Worked wonderful. Had leftovers for almost a week! Will def make again...probably next weekend! :>)

Buttermilk-Battered Calamari

Reviewed: Jan. 24, 2011
I was surprised that this recipe came out so well. Only 4 stars cuz the batter didn't stick so well to the calamari. I did add in some extra spice seasonings to the flour and some panko too. Great starter recipe and I can't wait to make again!! Yummo!

Creamy Rice Pudding

Very good! I added a little extra butter and it came out very good. On top of it I also added brown sugar. Delicious! Only rated four cuz I needed the brown sugar to add an extra sweetness. Will make again.

Easy Garlic Broiled Chicken

Reviewed: Jan. 14, 2011
I was disappointed with this recipe. I followed it exactly. The chicken burned and turned out rather dry. Also, I felt the garlic overwhelmed the taste. I may use this recipe as a starter recipe but I wouldn't broil because I don't like burnt chicken. Also, it was not cooked enough after the suggested time. I truly wished it would have turned out like the other reviewers cuz it sounds wonderful. Thanks for the recipe though.

Mexican Wedding Cookies

Reviewed: Dec. 27, 2010
I don't know what happened but I could not get these to turn out the way they were suppose to. I followed directions exactly EXCEPT I kept them in the refridgerator longer. They just didn't cook correctly. Also, after tossing in powdered sugar they got real mushy as the sugar didn't 'dry'. I made this twice wanting them to work but I couldn't do it. I won't make again b/c I just can't do it correctly (DRATS)! I wish it would have worked.

Roasted Turkey Legs

Reviewed: Dec. 27, 2010
I am so glad that I tried this recipe as I found it to be a great 'base' recipe. I only had turkey thighs. I 'brined' the turkey thighs with salt water for 4 hours and won't do that again as it came out to salty (my fault). Put lots of butter under the skin and used s/p/season salt. Put butter under thighs in pan also. Needed to add about 15 minutes cooking time. Worked great!!! I will def make this again.

Milk Braised Pork Loin

Reviewed: Dec. 27, 2010
I am glad I tried this recipe but found that it just wasn't for me. It was too salty and the meat turned out dry. I did like the 'milk curds' but again...too saltly. I prefer more seasonings. Interesting recipe though...

Tiramisu Toffee Dessert

Reviewed: Dec. 27, 2010
I will make this dessert over and over and over again. It was a HUGE hit! I got so many compliments that I starting getting embarrassed. I altered slightly. 1. Used 2 SaraLee frozen pound cakes. 2. Used International Cafe French Vanilla coffe with some Bailey's Irish Cream 3. Layered in triffle bowl as follows- cake, coffee, frosting, Heath Bar Crunchies, cake, coffee, frosting, Heath Bar Crunchies. Made the night before. There were no leftovers. I should have made two! I can't wait to make this again and again. Everyone must make this at least once!!
