Coffee Mug Cake

Yum! I used whole wheat flour, cut back on a little of the white sugar, and added a few dashes of cinnamon, nutmeg, and cloves to the cake part. Definitely rely on a toothpick, because if you have a clear mug, it still looks a little wet through the side even when it's not. I think I'll try it with cocoa next time.

No Bake Cookies III

I was craving chocolate and all we had was cocoa powder, so I found this. I halved the butter, cut out a 1/2 cup of sugar, and added a tbsp of cocoa. Definitely have the oats, peanut butter, and vanilla all in a bowl and ready to dump into the boiling ingredients together- it wouldn't have worked well otherwise.I think it would taste better with natural peanut butter, since it's still very sugary, so maybe I'll try that next time. It's a great quick fix if you lack ingredients and don't feel like running to the store.

Pumpkin Chocolate Chip Muffins

Yummy! I made a half batch and, like others, I used 1/2 white, 1/2 whole wheat flour, and 2 eggs instead of substitute. I used 1/2 cup brown sugar and no white. I also added a few dashes of ground cloves because I love the scent. Turned out 11 very tasty muffins.

Whole Wheat Blueberry Pancakes

Yum! I used brown sugar instead of artificial sweetener (chemicals: yuck), and dropped the blueberries into the pancakes after I poured them, because I find that easier. Great way to make healthier pancakes!

Pumpkin Oatmeal

This is a good change for oatmeal, and I love getting a vegetable at breakfast. I didn't have nuts, used raw honey and 1% milk, loaded on the cinnamon, added a few dashes of cloves and ground some fresh nutmeg. It's not fall-over amazing, but I liked it and will make it occasionally, especially when I have pumpkin left over from another recipe.

Strawberry Bread

Loved it! Like others, I used half whole wheat flour, half white; half apple sauce, half canola oil; 3/4 the sugar; double the berries. I would have used half the sugar, but my strawberries were a little tart. The bottom of my cake stuck in the pan, but I pieced it back together and it still slices fine. Wonderful way to use strawberries!

Microwave Baked Apples

Yum! I make one apple at a time, split in half, and put the fillings in the core depressions. I don't really measure anything but the brown sugar, but make sure you mix the spices with the sugar. It's easier to eat peeled, but the peel is pretty tasty baked, too.

Caramel-Filled Chocolate Cookies

Made these for work and they were devoured. I skipped the nuts; there was enough going on with these cookies and it took me ages to wrap the dough around the Rolos. They do get stale in about a week, so make them for an event where they'll be eaten quickly. My mother didn't think the white chocolate topping was necessary, but I liked it. I would like to try them with Reese's sometime. Rich, delicious special-occasion cookies!

Roxie's Bran Muffins

I make this recipe all the time. I only use 1/3 cup honey, olive oil instead of butter, plus a little baking powder. I don't like raisins, but I've had them without, which was still good, and I've had them with blueberries, which was awesome. They're yummy and full of fiber!

Mushrooms with a Soy Sauce Glaze

I did half butter, half olive oil. Wow, they were so good I ate them all in one go. Next time I think I'll make rice, too, so I get at least two meals out of them. Yum.

Grilled Green Apple and Gruyere Sandwich

So, I did what other reviewers did and substituted a lot. I used shredded mozzarella and whole grain bread from the grocery store bakery. Also, I found that I had to grill all the bread at once, topping half with the apples and half with the cheese and honey because the cheese won't melt, and therefore won't stay, on top of the apple slices. It tasted very good and was something different, which was nice.

Four Cheese Macaroni Casserole

I make this all the time; it makes a lot and I just freeze it in individual meals for when I don't have time to cook. I use fresh herbs when I can and canned diced tomatoes. If you do use fresh herbs, though, make sure all your ingredients are ready to go by the time the pasta's cooked, for the cheese won't melt properly unless it's mixed in immediately. It's not a very healthy meal, but probably better than boxed mac 'n cheese, and tastes _much_ better!

Artichoke Tetrazzini

I didn't like this but gave it a star more than I think it deserves because I changed stuff and that might have ruined it. I added garlic and had to use artichoke hearts in water because that's what I had. I put in Italian seasoning instead of thyme and used wheat noodles. The first time I ate it I just thought it was bland. Just not to my tastes, I suppose.

Penne Pasta with Spinach and Bacon

I added mushrooms and some onion and didn't put the cooked bacon back in until the end, so it stayed crunchy. Completely skipped the oil, since the bacon grease was more than enough, and added a few dashes of Italian seasoning. It was very good! A light taste easily adjusted for individual preferences. It's a keeper.

Spaghetti Carbonara II

I used whole wheat pasta, added a few mushrooms, extra garlic, skipped the first tbsp of oil. It was okay. A lot of parm cheese helps. I appreciate the lack of heavy or whipping cream, but it tastes watered down, so I think I'll keep looking for another recipe.

Spice Bars

I followed other reviewer's advice and added an egg and watched how long I left them in the oven. When they first came out, they tasted really good. It was odd, though, because after a few hours, they didn't taste as good. It became something of a chore to finish them off. So.. maybe skip the egg? Also, I didn't use half the icing and they were plenty sweet.
