Honey Parsnips

I am still in the middle of cooking this. Something must be off here. Too much water? Too short cooking time? As directed, the honey, water, butter mixture never coated the parsnips to begin with....Just became honey water. And so..after the initial 30 minute cooking time, the parsnips were nowhere near soft..I kept adding to the cooking time...I am now at over an hour and 30 minutes going on two hours. Looks like this sauce is reducing slowly and may coat..Probably will taste fine when done. After all,,boiling in buttered honey water will most definitely make most vegetables taste pretty good.....End result...OK,,after 2 hours+ cooking time (I added some cinnamon, nutmeg, salt and pepper..) this was indeed delicious..but I find the directions need some editing.

Spaghetti Carbonara II

I am eating this one as I write. Superb. I reduced the amount of spaghetti by 1/4 per suggestions. I also invested in grating my own pecorino romano cheese for the mix at twice the amount called for which would be a cup (half a wedge works out to about $2.50). Another investment was the 1/4 lb. pancetta to replace the 8 slices bacon.($2.68 as opposed to ?). Once it was finished I did sprinkle freshly grated Wisconsin Parmesan on top. This was rich enough that I cannot see the need for the addition of cream. That would be overkill. Oh, and the fresh parsley? Do not risk getting in a traffic accident rushing to the store if you have none on hand. I am truly savoring this as I type. Thumbs up! Thanks Sandy.

Out of this World Turkey Brine

Adding to my other reviews of this brine..Another Thanksgiving and another smoked turkey with this brine. Even the smell of cold leftovers still make me involuntarily salivate like Pavlov's dogs.

Fried Chicken Gizzards

Recipe should include a moisture wash for coating, which I did with the egg, a little water and the hot sauce. Big problem here is the parboiling which I think takes out a lot of the flavor of the gizzards themselves. The coating was good but I missed the natural flavors.

Fresh Sardines Naples Style

Very tasty. A flag went up when I saw mint(???) in the ingredients but have no fear. It all works together very well (I kept everything warm in the oven on the platter after adding the vinegrette and shredded mint). Still recognizble sardine taste. By the way, those fresh (frozen) sardines cost me $2.80 at the local oriental market..
