Raspberry Oat Bars

Reviewed: Apr. 20, 2011
I didn't have raspberry preserves so I used strawberry. After they baked, I spread a layer of melted white chocolate on top to make them more of a dessert. The results were great and they were like a strawberry pop-tart.

Lower Fat Banana Bread I

Reviewed: Apr. 20, 2011
I use half white and half brown sugar. Then I substitute some of the butter with applesauce to make it healthier. Delicious banana bread with less guilt!

Chocolate Chocolate Chip Cookies I

Reviewed: Apr. 20, 2011
I followed other reviewers' suggestions. I substituted some white sugar for brown sugar. Then to make sure they were going to stay soft and chewy, I added a box of vanilla pudding. Also, I used Guittard mint chips instead of chocolate chips and they tasted like Andes mints, but in cookie form. Great chocolate cookie base and the mint made it a wonderful combination.

Saltine Toffee Cookies

Reviewed: Apr. 20, 2011
So easy and addicting! A possible variation is using graham crackers instead of saltines.

Downeast Maine Pumpkin Bread

Reviewed: Apr. 12, 2011
I only had half a can of pumpkin so I halved the recipe and made no changes. I was impatient and didn't want to spend an hour baking bread so I made muffins instead. I baked the muffins for about 22 minutes. I don't know how they taste the day after because they didn't last very long after they came out of the oven.

Butter Flaky Pie Crust

Reviewed: Apr. 10, 2011
This was my first time making pie crust and I followed the recipe exactly. I didn't have a food processor so I cut the butter into cubes and froze them. It was hard making it by hand, but worth it. I watched a video on youtube on how to make pie crust and that helped. I would make this again. :)

Blueberry Cream Muffins

Reviewed: Mar. 24, 2011
Great base recipe. I used 1/2 cup of applesauce, 1/2 cup of oil, 1 cup of white sugar, and 1 cup of light brown sugar. I also added cinnamon because I love pairing blueberries with cinnamon. I didn't have sour cream so I used low fat blueberry yogurt. The muffins were so moist and just the right amount of sweetness. I made one batch with just blueberries and then in the second batch, I added white chocolate chips. The white chocolate chips just added another level of sweetness and made them more dessert-like.

Strawberry Coffee Cake

Reviewed: Mar. 3, 2011
Very good recipe! It turned out moist and just the right amount of sweetness. I doubled the recipe for a 9x13 pan, but I didn't double the topping and the result was perfect. Make this with fresh strawberries and you won't regret it.

Best Brownies

Reviewed: Jan. 14, 2011
These brownies really are the best brownies! They're even better than box brownies. I didn't make the frosting because I didn't feel like these brownies needed it. Mine turned out fudgy and chocolatey, just the way I like them. I added 2 teaspoons of Kahlua for more chocolate flavor.

Simple Scones

Reviewed: Jan. 11, 2011
These scones turned out perfect. They were moist and not too sweet. I even used fat free sour cream to cut down on some of the fat. They had a great texture. I added chocolate chips instead of raisins because I didn't have any raisins.

Chantal's New York Cheesecake

Reviewed: Jan. 11, 2011
I followed the recipe along with the tips provided by the other reviewers, such as not over-mixing and using a water bath. This was my first time making cheesecake and I ended up making this twice in two days and neither one of them cracked! Delicious and great-looking cheesecake! I highly recommend this recipe. It's not too sweet and has great texture.

Best Black Beans

Reviewed: Dec. 1, 2010
So simple and flavorful. I used chili pepper because I didn't have cayenne pepper and I used more cilantro than the recipe asked for because I like cilantro. I added a can of mixed vegetables to the black beans and made a bean and vegetable burrito.

Lower Fat Banana Bread II

Reviewed: Oct. 8, 2010
Delicious banana bread! It doesn't even taste low fat. I made a few changes due to my personal preferences. I used 1/4 cup brown sugar, 1/4 cup white sugar, 3 bananas, and 1/3 cup fat free sour cream. I also added 1 tsp cinnamon, 1/4 tsp nutmeg, and 3/4 cup chocolate chips. I'm sure the recipe didn't need any of those changes though.

Chocolate Crinkles II

Reviewed: Sep. 22, 2010
I halved this recipe and I made about 31 cookies. I rolled them into balls and they didn't spread very much when I baked them. They reminded me of a brownie cookie- moist, dense, and good chocolate flavor. Best of all, they are low in calories and fat.

Applesauce Bars

Reviewed: Sep. 7, 2010
I used a 9x9 pan and added 1/2 cup of pecans. Initially, I tried them without the frosting, but then I felt like something was missing so I made the frosting and added some brown sugar to it. I suggest you add the frosting! It made these applesauce bars even better!

Almost No Fat Banana Bread

Reviewed: Aug. 6, 2010
This recipe is amazing. You can't even tell it almost has no fat. I followed the changes made by snapplemeblue and that resulted in a moist, dense, and tasty banana bread.

Lemon Blueberry Drop Scones

Reviewed: Jul. 21, 2010
I used fat free sour cream and lemon juice instead of lemon yogurt because I didn't have any lemon yogurt. Even with that substitution, these scones were amazing! I ended up with 18 scones.

Apple Strudel Muffins

Reviewed: Jun. 9, 2010
I read the other reviews and I added cinnamon and nutmeg to the batter, which was a good idea. They added so much flavor to the muffins! Then instead of 1.5 cups of apples, I actually used 3 cups, which enhanced the apple flavor. Overall, great recipe! The muffins turned out moist and delicious.
