These are the changes I've made over time: leave out the beer; use 1 or no chili peppers (d/o mood); replace two of the chili bean cans with 2 cans of black beans (I like the change-up in colors w/ black beans). I'm sure it would be great without these changes, but I don't care for beer and I reduce the qty of chili peppers to reduce the heat. This chili punched me in the face the first time I made it with all the peppers. Besides, there is plenty of heat w/o the peppers so I figure it's fine. IMPORTANT NOTE: Wash beneath your nails (or wear gloves) after preparing everything, and again after putting all the spices in the pot. I neglected to wash the pepper juice out well enough one time when making this, and the internal burning nearly reached my elbows. Seems like a little common sense, yes, but sometimes I don't think. Also, use your biggest pot. I tried this out in my 6qt slow cooker the first time and it doesn't fit. I use a stock pot and it fits nicely.
In the end this will be probably be the best chili you've ever eaten. All these ingredients, and the cost, is totally worth the effort.
