I am a stay at home mom with 2 girls. I do like to cook, but find it hard to come up with ideas constantly, so I turn to the web and sites like this. I am a bit on the health conscience side, so try to cook that way for my family. I love to take a fatty recipe and try to "healthify" it. Enjoy trying new recipes.
My favorite things to cook
I love to bake above all. Anything! If it is sweet, I want to make it. Cooking, I love trying new slow cooker ideas, casseroles, homemade salsa. I like a challenge, but nothing too much so, or I get antsy.
My favorite family cooking traditions
Every year on Christmas eve, my mom makes a huge batch of stacked Swedish pancakes that drip with butter, cinnamon and sugar...delicious! We slice it like pie and eat until we are sick. Also, my girls and I do a ton of baking every holiday and give it all away to friends in pretty baskets. I love seeing their faces when we try new recipes and they find a new favorite!

My cooking tragedies
Have tried a few things ...once I tried to make entirely fat free enchiladas...the cheese, the beans, tortillas..everything. Needless to say, my Rottweiler who would eat ANYTHING sniffed, and walked away. My husband took a bite and promptly spit it back on his plate. Had a batch of cookies once and some awful coffee truffles that I wouldn't feed to a rodent.

Simple Whole Roasted Chicken
Made this last night and it was the first whole chicken for me. I have to say, I will make this again and again. First off...simple, simple,simple! Second, I doubled all spices (not sugar or salt) and marinated for 24 hrs like directed. I rubbed the spices under the skin too. It was almost done cooking when I had to leave, so my hubby turned off the oven, covered it and when we got home an hour later, it was perfect! So, with that being said, I don't know if keeping it in the oven with the oven off cooked it anymore or not. My kids just shoveled it in their mouths...no chatting or fighting like normal. ;) The house smelled wonderful to boot. This is such a great but mild flavored bird. Moist and delish! Thank you!

Award Winning Peaches and Cream Pie
This was good. I followed others advice and cooked the crust for 10 minutes prior to adding peaches. I think this worked out well. I would have preferred a little extra flavor throughout the dessert though, like possibly some cinnamon in the peaches. It was light and easy to make. I had doubled the batch like others had recommended and it made a lot. Would be perfect for a potluck.

Slow Cooker Chicken Stroganoff
This is good but a little on the rich side. I even used reduced fat cream cheese and healthy request soup...kids liked it, but was a bit heavy for them. The ease to make was great, considering I threw in frozen breasts. The tenderness was good too...served over egg noodles. I will probably make again but cut down the amount of cream cheese and soup and maybe add some water.
