Beaker's Vegetable Barley Soup

This was great! It was my first attempt at cooking a meal with barley in it. I used pearl barley, not realizing it was a less healthy and more processed variety. I will try pot or scotch barley next time to increase the nutritional value. I am on the weightwatchers core plan and it fit in perfectly without the sugar. I used chicken broth and added chicken to it. I also added some salt and realized that the broth has added salt and will omit it next time. I also omitted the sugar and parsley. It tasted really great and my 3 year old even ate it:)

Very good cookies! I did cut the amount of chocolate chips in half. Our preschool teachers really liked them for Xmas Gifts:)

Mixed Seafood Curry

We eat and make curry dishes a lot and I thought I would try a new recipe. I was disappointed with this curry. I would describe this as an attempt at a Thai curry rather than Indian because of the coconut milk and lime. I was expecting a more authentic curry and found the lime to be overpowering. The flavour was OK, but nothing compared to other curry dishes we have tried. The asparagus also needed to be on a bit longer than the seafood (ours was frozen shrimp and scallops). I would suggest putting the asparagus in 3-5 minutes sooner than the seafood, especially if you like asparagus tender to the tooth with no crunch.

Grandma's Lemon Meringue Pie

My brother in law was complaining that no one made lemon meringue pie for him. I whipped this up after lunch for christmas dinner. It turned out very nicely. I wanted a bit more meringue, so I used 5 eggs instead of 4. I would probably reduce the sugar in the lemon for my family, but it turned out very nicely and was super easy:)
